A menudo se subestima, al igual que la gesti&oacute;n de las temperaturas de la c&aacute;mara del horno, lo que da lugar a productos de escaso valor, en muchos casos poco digeribles.<br \/>\n&nbsp;<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p style=\"text-align: justify;\">Independientemente de la temperatura del horno y del tipo de pizza, ya sea cl&aacute;sica, en bandeja o en pala, cuando la pizza se introduce en la c&aacute;mara de cocci&oacute;n, el calor se propagar&aacute; de tres maneras diferentes: desde abajo, por conducci&oacute;n del calor transmitido desde la solera, por irradiaci&oacute;n, a trav&eacute;s del calor procedente de la parte superior y de las paredes del horno, y, por &uacute;ltimo, por convecci&oacute;n, por el calor que se transmite a trav&eacute;s de la evaporaci&oacute;n del agua contenida en la masa.<br \/>\n&nbsp;<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p style=\"text-align: justify;\">Durante la cocci&oacute;n, se producen importantes transformaciones qu&iacute;mico-f&iacute;sicas en nuestro producto, que afectan tanto al aspecto organol&eacute;ptico como a la digestibilidad. La temperatura adecuada del horno es crucial, ya que, una vez introducida la pizza en el horno, se producen inmediatamente las transformaciones qu&iacute;mico-f&iacute;sicas mencionadas m&aacute;s arriba: un r&aacute;pido aumento de la actividad de la levadura, una elevada actividad enzim&aacute;tica, la gelatinizaci&oacute;n del almid&oacute;n, la evaporaci&oacute;n del agua y la reacci&oacute;n de Maillard.<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/Cottura_combinata_1.jpg\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p style=\"text-align: justify;\">Una vez que se haya entendido el proceso de cocci&oacute;n, dependiendo del tipo de pizza que se quiere hacer, hay que evaluar cuidadosamente la temperatura de la c&aacute;mara del horno, sobre todo en los productos en bandeja, donde la cantidad de masa nos obliga a utilizar una temperatura que no sea demasiado alta, ya que de lo contrario tendr&iacute;amos caramelizaci&oacute;n en el exterior dejando crudo el interior. Mientras que, una temperatura demasiado baja, por el contrario, dar&iacute;a como resultado una pizza demasiado crujiente debido a la prolongada y lenta evaporaci&oacute;n del agua. Tambi&eacute;n la pizza en pala, que tiene caracter&iacute;sticas t&iacute;picas como la textura crujiente y un alto contenido en agua, necesita una temperatura de cocci&oacute;n muy cuidadosa.<br \/>\n&nbsp;<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p style=\"text-align: justify;\">Para obtener un excelente producto final, la pizza en bandeja, en pala y en molde son tipos de pizza que necesitan una precocci&oacute;n; despu&eacute;s del proceso, el producto non debe presentar la reacci&oacute;n de Maillard en superficie y tiene que estar algo h&uacute;medo en el interior. Al tacto, el producto debe estar aun blando y no completamente cocido. Una t&eacute;cnica excelente es utilizar vapor.<\/p>\n<p style=\"text-align: justify;\">\n<strong>&iquest;Qu&eacute; ventajas tiene la precocci&oacute;n?<\/strong><br \/>\nAnte todo, sin duda, la gesti&oacute;n y optimizaci&oacute;n de los tiempos de procesamiento.
