Esta certificaci\u00f3n, creada en los a\u00f1os 90, protege la autenticidad de los productos locales, las recetas tradicionales y las actividades artesanales. La historia de la Paposcia se remonta al siglo XVI, cuando los panaderos de Vico del Gargano usaban la masa sobrante para probar la temperatura de los hornos de le\u00f1a.
