A m\u00ed, que dirijo una revista donde el t\u00e9rmino sala tambi\u00e9n est\u00e1 en el t\u00edtulo de la cabecera.<br \/>Pero fue un llamado de atenci\u00f3n justo y admit\u00ed, con gran respeto por esa afirmaci\u00f3n que quer\u00eda valorar una profesi\u00f3n demasiado a menudo menospreciada, la raz\u00f3n de Altan Gini, el camarero que la hab\u00eda hecho. Hab\u00eda reservado para una cena solitaria en La Carbonara, en Campo de  Fiori, en el \u00faltimo minuto; pasar\u00eda despu\u00e9s de media hora y el camarero me hab\u00eda recomendado el piso superior. Al llegar al lugar opt\u00e9 por una mesa al aire libre, despu\u00e9s de que Antan Gini me recomendara dos o tres lugares se resign\u00f3 d\u00e1ndome la mesa que hab\u00eda elegido. Me sent\u00e9 y la mesa bailaba sobre los adoquines desiguales. Cuando lo se\u00f1al\u00e9, el camarero me dijo esa frase, a\u00f1adiendo que esa mesa, en ese agujero, sab\u00eda que no estaba bien. Un verdadero agujero que ni siquiera se pod\u00eda cubrir con siete cent\u00edmetros de plantillas. Solo si se un\u00eda a otra mesa se sosten\u00eda pero, en ese punto, se convert\u00eda en una mesa para cuatro y, en Roma, una mesa para cuatro para un solo comensal es imposible de aprovechar.<br \/>Antan Gini es un se\u00f1or alban\u00e9s llegado a Italia en 1990, probablemente a bordo de ese barco lleno de personas cuya foto hab\u00eda dado la vuelta al mundo, y desde hace 24 a\u00f1os es camarero en La Carbonara, un local hist\u00f3rico &#8211; es de 1912 &#8211; siempre gestionado por la misma familia. Se enfrenta cada d\u00eda al hecho de que este no es un restaurante con men\u00fa tur\u00edstico, como podr\u00eda parecer dada la ubicaci\u00f3n. Yo mismo inicialmente pensaba as\u00ed. Y se encuentra presentando una cocina, predominantemente romana, que cuenta con materias primas de absoluta calidad como el cacio e pepe con los spaghettoni monograno Felicetti o las anchoas de Cetara de la marca Armatore, no productos de primera precio.<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/camerieri-1.jpg\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Comer solo a veces ayuda, mirar alrededor, curiosear en las mesas vecinas, recoger fragmentos de conversaci\u00f3n en varios idiomas, ver qu\u00e9 y c\u00f3mo beben los turistas en Roma, como probablemente en cualquier otra localidad italiana, nos lleva a reconsiderar el conocimiento que tenemos de nuestros h\u00e1bitos alimenticios; los italianos comen por el placer que esto implica, los extranjeros generalmente solo para nutrirse.<br \/>\u00abLa carbonara es el plato m\u00e1s elegido\u00bb, me conf\u00eda Antan Gini. Ese, despu\u00e9s de todo, que m\u00e1s se acerca al gusto de los americanos; no es casualidad que la historia de este plato comience con las raciones K que ten\u00edan los estadounidenses durante la Segunda Guerra Mundial en Italia.<br \/>Con Artan esa noche, a pesar de la falta de personal, siempre hab\u00eda tiempo para intercambiar un par de palabras. Y me hizo reflexionar sobre la historia de este hombre que se ha creado una vida y un estilo todo italiano, que trabaja desde hace 24 a\u00f1os siempre en el mismo lugar y que habla bien de la familia propietaria, del aceite que pone en mi mesa diciendo que proviene de los olivares que esta familia tiene fuera de Roma y que esas botellas se encuentran solo en La Carbonara.
