Vamos a descubrir la cocci&oacute;n en un horno de le&ntilde;a.<\/p>\n<p>&nbsp;<\/p>\n<p><b>Hoy en d&iacute;a, todo el mundo conoce el horno de le&ntilde;a.<\/b> Se caracteriza por la cl&aacute;sica boca arqueada o rectangular, la tradicional c&uacute;pula interna y, sobre todo, <b>el crepitar de los troncos de le&ntilde;a en su interior<\/b>.<\/p>\n<p>Sin embargo, sus or&iacute;genes vienen de la antig&uuml;edad. Seg&uacute;n parece, el Homo sapiens construy&oacute; una fosa subterr&aacute;nea hace unos <b>29.000 a&ntilde;os<\/b>, que podr&iacute;a considerarse el ancestro de este tipo de horno, pero la primera aparici&oacute;n de un verdadero horno de le&ntilde;a tal y como lo conocemos hoy <b>se remonta a los egipcios, que manten&iacute;an la zona de cocci&oacute;n separada de la de calentamiento.<\/b><\/p>\n<p>Luego fueron los griegos y los romanos quienes la perfeccionaron hasta llegar a una sola c&aacute;mara de combusti&oacute;n como la conocemos hoy.<\/p>\n<\/div><\/div>\n<div class=\"stripe-quote \">\n<div class=\"stripe-background\">\n    <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/background-quote.jpg?1600183999\" alt=\"\" \/>\n<\/div>\n<div class=\"text-description\">\n\tLa apreciaci\u00f3n de los romanos por este revolucionario utensilio de cocina fue tal que establecieron las fornacalia, fiestas para celebrar a la diosa Fornace.<\/div>\n<\/p><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Avanzando a tiempos m&aacute;s modernos, <b>el horno de le&ntilde;a se instalaba t&iacute;picamente en las zonas agr&iacute;colas<\/b> para producir principalmente pan para la comunidad. Fue <b>m&aacute;s tarde<\/b> cuando el horno de le&ntilde;a se convirti&oacute; en <b>el pilar de miles de pizzer&iacute;as de todo el mundo.<\/b> Al ser cada vez m&aacute;s dif&iacute;cil encontrar buenos artesanos que construyeran el horno con b&oacute;veda de ladrillo y al necesitar tiempos de producci&oacute;n m&aacute;s cortos, con el tiempo surgi&oacute; el horno prefabricado moderno.<\/p>\n<p>Hoy en d&iacute;a, hay una serie de <b>caracter&iacute;sticas que son esenciales<\/b> para un buen horno de le&ntilde;a. En primer lugar, la utilizaci&oacute;n de <b>materiales de alta calidad<\/b>, cuya cima son los ladrillos refractarios, que deben tener una <b>composici&oacute;n id&oacute;nea con el porcentaje adecuado de al&uacute;mina<\/b>. Un detalle no menos importante es la <b>elecci&oacute;n de los materiales aislantes<\/b>, que deben tener la funci&oacute;n de mantener el calor, una temperatura estable y optimizar la producci&oacute;n. Por &uacute;ltimo, no hay que olvidar el <b>estudio de las proporciones de tama&ntilde;os y espesores<\/b>, un factor muy importante <b>para un rendimiento &oacute;ptimo<\/b>.<\/p>\n<p>Uno de los aspectos m&aacute;s fascinantes del horno de le&ntilde;a es, sin duda, <b>su car&aacute;cter tradicional y artesanal<\/b>. El horno de le&ntilde;a y el pizzero tienen su propio lenguaje de comunicaci&oacute;n. Cuando las paredes interiores y la b&oacute;veda se vuelven blancas, el pizzero sabe que el horno est&aacute; listo para empezar a hornear. Si la llama empieza a apagarse y la luz del interior del horno falla, el pizzero sabe que es el momento de a&ntilde;adir m&aacute;s le&ntilde;a. Sin olvidar la <b>cl&aacute;sica medici&oacute;n con la mano frente a la boca del horno, que para los pizzeros de gran experiencia equivale a medir con un term&oacute;metro<\/b>.<\/p>\n<p>La llegada de las nuevas tecnolog&iacute;as y la nueva <b>conciencia medioambiental<\/b> han tra&iacute;do muchos cambios al mundo de la cocci&oacute;n de pizzas, con la aparici&oacute;n de nuevos tipos de cocci&oacute;n, como <b>la cocci&oacute;n a gas, que se acerca m&aacute;s al apreciado horno de le&ntilde;a.<\/b> Hoy en d&iacute;a existen tipos de quemadores de gas que hacen muy dif&iacute;cil distinguir una pizza horneada en un horno de gas de una horneada en un horno de le&ntilde;a.
