Partiendo de esta convicci\u00f3n, <strong>Agugiaro &amp; Figna Molini<\/strong>, en colaboraci\u00f3n con <strong>Slow Food Italia<\/strong>, ha ideado<strong>\u201cMucho Cambio<\/strong>\u201d: una gira nacional, dividida en seis etapas, organizada en las principales ciudades de Italia para promover, mediante buenas pr\u00e1cticas, una mayor atenci\u00f3n a la cuesti\u00f3n de la sostenibilidad a gran escala, poniendo en pr\u00e1ctica, desde el principio, acciones concretas de respeto a nivel social, medioambiental, cultural y econ\u00f3mico. &nbsp;<\/p>\n<p>El objetivo era iniciar un di\u00e1logo y una confrontaci\u00f3n entre profesionales del arte de la panader\u00eda, la pizza y la cocina para sensibilizar y fomentar el nacimiento de un portavoz colectivo de una nueva visi\u00f3n de hacer negocios, de crear trabajo y valor para los territorios, las personas y los lugares.<\/p>\n<p>En la \u00faltima reuni\u00f3n que se celebrar\u00e1 en Terra Madre Salone del Gusto 2022, se recoger\u00e1n los primeros datos, a trav\u00e9s de la implicaci\u00f3n de los participantes en las reuniones anteriores, compartiendo las primeras consideraciones. No se trata, pues, de un punto de llegada, sino de una parada necesaria para elaborar las primeras directrices de este viaje, que representan la primera pista compartida por quienes han decidido formar parte de este proyecto y convertirse en sus principales portavoces. <\/p>\n<p>Mucho cambio no es un camino nato, sino que quiere convertirse en un verdadero movimiento, inspirador y formativo para quienes en el futuro opten por adoptar sistemas de trabajo m\u00e1s atentos al bienestar del entorno, de sus empleados, con el objetivo de revigorizar el sistema de calidad en el sector de la restauraci\u00f3n.<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/un-sacco-di-cambiamento-un-tour-per-promuovere-la-sostenibilita-1.jpg\" alt=\"\">\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>En Terra Madre habr\u00e1 momentos de formaci\u00f3n y puesta en com\u00fan para trazar un camino coherente hacia la creaci\u00f3n de un verdadero Manifiesto. De hecho, los protagonistas han colaborado en la concepci\u00f3n de las primeras directrices a trav\u00e9s de sus experiencias laborales, analizando las din\u00e1micas y caracter\u00edsticas de los territorios de origen, prestando atenci\u00f3n al tema de los residuos, la valorizaci\u00f3n de los productos y la importancia de la formaci\u00f3n, poniendo en marcha una serie de acciones concretas de medici\u00f3n, selecci\u00f3n y mejora. <\/p>\n<p>En el centro del recorrido est\u00e1 la orientaci\u00f3n de Agugiaro &amp; Figna Molini hacia las cuestiones de sostenibilidad. En los \u00faltimos 10 a\u00f1os, la empresa ha emprendido varias acciones en esta direcci\u00f3n; entre ellas, el suministro de energ\u00eda procedente \u00fanicamente de fuentes renovables para alimentar las plantas de molienda; el uso exclusivo de papel con certificaci\u00f3n FSC para el envasado de la harina; la creaci\u00f3n y el mantenimiento de 4 cadenas de producci\u00f3n certificadas, para el cultivo de cereales antiguos y la agricultura sostenible mediante pr\u00e1cticas de precisi\u00f3n, de cereales ecol\u00f3gicos destinados a mantener las variedades de cultivo. Por \u00faltimo, la plantaci\u00f3n del \u00abBosque de Molino\u00bb: un bosque plantado en un \u00e1rea de 13 hect\u00e1reas adyacente a la sede de Collecchio, que dar\u00e1 cobijo a 18.000 plantas entre arbustos, \u00e1rboles y esencias oficinales y que absorber\u00e1 hasta 220.000 kg de CO2 al a\u00f1o, compensando las emisiones totales de las plantas de la empresa en sus cuatro f\u00e1bricas (Curtarolo, Collecchio, Magione y Rivolta d&#8217;Adda).  <\/p>\n<\/div><\/div>\n<div class=\"shared-content \">\n            \t\t<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Fue organizada por Agugiaro &amp; Figna Molini, en colaboraci\u00f3n con Slow Food Italia, para sensibilizar a pizzeros, panaderos, pasteleros y cocineros sobre las pr\u00e1cticas virtuosas.
