Tras haberse distinguido el a\u00f1o pasado, ganando el primer puesto en la categor\u00eda \u00bbPizza in teglia\u00bb del Campeonato Mundial de Pizza de Parma -lo que marc\u00f3 un momento importante en su trayectoria, pero ciertamente no un punto de llegada-, ahora sigue ofreciendo una pizza que cuenta la historia del territorio, elaborada con ingredientes cuidadosamente elegidos y una visi\u00f3n que mira hacia la sostenibilidad. <\/p><p><strong>Domenico, \u00bfqu\u00e9 ha cambiado desde tu victoria del a\u00f1o pasado? \u00bfSentiste el peso de las nuevas expectativas de los clientes? H\u00e1blame de los cambios y de c\u00f3mo ha ido el campeonato de este a\u00f1o.  <br><\/strong>Muchas cosas han cambiado desde la victoria del a\u00f1o pasado. La que m\u00e1s me satisface es la reacci\u00f3n de mis clientes -antiguos y nuevos- que, con sus amables palabras, me hacen trabajar con m\u00e1s serenidad. Entrar en el Palaverdi de Parma y leer mi nombre, por segundo a\u00f1o consecutivo, es siempre una gran emoci\u00f3n. Este a\u00f1o compet\u00ed en otra categor\u00eda, la Pizza en pala, aunque hac\u00eda a\u00f1os que no la hac\u00eda. Present\u00e9 una masa con un 90% de harina superior 00 y un 10% de harina de espelta, y una hidrataci\u00f3n de aproximadamente el 80%. Por supuesto, potenciamos el territorio, eligiendo empresas locales para otros productos, como el queso y los embutidos. Es una elecci\u00f3n sincera, que me llena de orgullo. Todas mis pizzas se elaboran con productos de nuestras granjas, que est\u00e1n cerca de m\u00ed y, como te he dicho, la mayor\u00eda de los productos proceden de mi huerto, cuidado por mi padre.   <\/p><p><strong>\u00bfHay un gesto, un valor o un principio que hoy, en tu opini\u00f3n, no puede faltar en una pizzer\u00eda que realmente quiera hablar de futuro?<\/strong><\/p><p>En mi pizzer\u00eda, casi instintivamente, no me falta ni puede faltar una historia que hable a trav\u00e9s de la pizza de tradici\u00f3n, estacionalidad, con especial atenci\u00f3n a la elecci\u00f3n y el uso \u00bbsostenible\u00bb del producto. Esto significa que a menudo utilizo mi ingenio para reutilizar totalmente la materia prima, a menudo con recetas recicladas que utilizan el 100% de los ingredientes. <\/p><p><strong>Dime, Domenico, \u00bfcu\u00e1l es hoy tu pizza favorita y cu\u00e1l me dejar\u00edas probar en comparaci\u00f3n con la del a\u00f1o pasado?<\/strong><\/p><p>Este a\u00f1o mi pizza favorita es \u00abLos sabores y aromas de mi territorio\u00bb. Una masa sencilla con harina 00, un porcentaje de tipo 2, aderezada con butifarra de cerdo negro a cuchillo, setas porcini de Bellegra, manteca de cerdo negro de la carnicer\u00eda de Roberto Cetrone, una scamorza de b\u00fafala, el tipo y los cristales de tomate de mi huerto, y una buena trufa blanca. <\/p><p> <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-41656f2a e-flex e-con-boxed e-con e-parent\"
