Il est impossible de pleinement d&eacute;finir ce qu&rsquo;est ce concept en seulement quelques lignes. Nous pouvons cependant commencer par mettre en &eacute;vidence sa diversit&eacute; d&rsquo;application dans des domaines tr&egrave;s vari&eacute;s.<br \/>\n&nbsp;<\/p>\n<\/div><\/div>\n<div class=\"stripe-quote \">\n<div class=\"stripe-background\">\n    <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/background-quote.jpg?1600183999\" alt=\"\" \/>\n<\/div>\n<div class=\"text-description\">\n\tAu regard de la crise environnementale et du r\u00e9chauffement climatique, la durabilit\u00e9 doit \u00eatre abord\u00e9e d&rsquo;un point de vue \u00e0 la fois \u00e9conomique et social, car tout cela est li\u00e9 \u00e0 notre quotidien. <\/div>\n<\/p><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Qu&rsquo;il s&rsquo;agisse de la hausse des temp&eacute;ratures acc&eacute;l&eacute;rant la fonte des glaces ou des conditions de travail au sein d&rsquo;une entreprise, d&rsquo;une usine ou m&ecirc;me d&rsquo;un h&ocirc;pital : ces diff&eacute;rents environnements doivent nous permettre de vivre une vie digne d&rsquo;&ecirc;tre v&eacute;cue, une vie durable. Ainsi, pour pouvoir assurer ces conditions, il est n&eacute;cessaire que l&#8217;employeur puisse op&eacute;rer dans un contexte &eacute;conomique qui permette de supporter les co&ucirc;ts de gestion. L&rsquo;objectif &eacute;tant toujours de satisfaire &agrave; la fois les employeurs et les collaborateurs.<br \/>\n&nbsp;<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/carta-vini-1.jpg?1674224144\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Tout ce fonctionnement s&rsquo;applique &eacute;galement au monde de la pizza, un monde en &eacute;volution rapide et constante, qui en une dizaine d&rsquo;ann&eacute;es est parvenu &agrave; s&rsquo;aligner &agrave; l&rsquo;univers de la gastronomie. Les cuisiniers et les pizza&iuml;olos sont d&eacute;sormais confront&eacute;s aux m&ecirc;mes d&eacute;fis. Parfois, aborder la question du d&eacute;veloppement durable dans le domaine culinaire peut &ecirc;tre per&ccedil;u comme une tendance pour rester dans l&rsquo;air du temps. Cependant, certains professionnels s&rsquo;efforcent r&eacute;ellement d&rsquo;appliquer les principes de la durabilit&eacute; dans leur quotidien professionnel, consid&eacute;rant ainsi ce concept comme un guide de bonnes pratiques. Il reste difficile de d&eacute;terminer avec certitude quel syst&egrave;me de cuisson est le plus favorable. Sans recontextualiser chaque situation avec pr&eacute;cision, il n&rsquo;est pas ais&eacute; de choisir lequel des fours &agrave; bois, &agrave; gaz ou &eacute;lectrique est &agrave; privil&eacute;gier en termes de durabilit&eacute; et d&rsquo;efficacit&eacute;. Bien que ce sujet m&eacute;riterait d&rsquo;&ecirc;tre approfondi, le four &eacute;lectrique devient de plus en plus populaire, tant pour ses performances que pour le niveau atteint en cuisson.<br \/>\n&nbsp;<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/prep_pizza.jpg?1674224145\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Nous pouvons compter quelques pr&eacute;curseurs actifs dans le domaine du d&eacute;veloppement durable en pizzeria. Nous avons &eacute;crit &agrave; leur sujet lors d&rsquo;autres occasions mais ils m&eacute;ritent d&rsquo;&ecirc;tre mentionn&eacute;s encore aujourd&rsquo;hui.<\/p>\n<p>Nous pensons notamment &agrave; Denis Lovatel, un pizzaiolo des Dolomites dont les efforts en faveur de la communication autour de la durabilit&eacute; sont notoires. Premier Italien appel&eacute; par le chef JP Mc Mahon pour participer &agrave; Galway au congr&egrave;s international Food on The Edge en Irlande.<\/p>\n<p>Il a commenc&eacute; par cr&eacute;er une pizza durable en rempla&ccedil;ant les prot&eacute;ines animales par des prot&eacute;ines v&eacute;g&eacute;tales. Il a d&rsquo;ailleurs ing&eacute;nieusement coup&eacute; de la past&egrave;que en un carpaccio pour l&rsquo;utiliser comme garniture. Ces garnitures saines ne proviennent donc pas d&rsquo;&eacute;levages intensifs et respectent la nature et son rythme. Mais Denis Lovatel n&rsquo;est pas le seul pizzaiolo &agrave; &eacute;tudier les m&eacute;thodes de conservation et de r&eacute;duction des d&eacute;chets. De nombreux pizzaiolos qui &eacute;prouvent un r&eacute;el besoin de mieux faire, participent dor&eacute;navant &agrave; ce cercle vertueux.<\/p>\n<p>C&rsquo;est au milieu de cette nouvelle tendance de r&eacute;duction totale des d&eacute;chets qu&rsquo;&eacute;voluent de nombreux pizzaiolos. C&rsquo;est le cas de Raffaele Pizzoferro du restaurant Lampara &agrave; Udine, qui utilise les tomates qui datent de plusieurs jours, encore tr&egrave;s bonnes mais un peu fl&eacute;tries, pour obtenir une cr&egrave;me en la passant au four avec de l&rsquo;ail, de l&rsquo;origan et du basilic. Par ailleurs, il a d&eacute;cid&eacute; d&rsquo;utiliser les restes des pizzas pour l&rsquo;alimentation animale gr&acirc;ce &agrave; une collaboration avec quelques agriculteurs de sa r&eacute;gion.<\/p>\n<p>Nous pouvons &eacute;galement penser &agrave; la SP143, une pizzeria pi&eacute;montaise du groupe La Credenza dirig&eacute;e par Giovanni Grasso et Igor Macchia. Le pizzaiolo (Giulio, le fils de Giovanni) collabore &eacute;troitement avec Igor Macchia, le chef cuisinier qui s&rsquo;occupe personnellement de Casa Format, un &eacute;tablissement poss&eacute;dant &eacute;toile verte Michelin. Ce lieu situ&eacute; dans un b&acirc;timent CasaClima a &eacute;t&eacute; con&ccedil;u pour optimiser l&rsquo;efficacit&eacute; &eacute;nerg&eacute;tique afin de r&eacute;duire au maximum sa consommation. Chaque d&eacute;tail y a &eacute;t&eacute; pens&eacute;, de l&rsquo;ameublement au chauffage. Il revendique une &laquo; hospitalit&eacute; responsable &raquo;. Le grand potager dans l&rsquo;arri&egrave;re-cour permet de produire des mati&egrave;res premi&egrave;res d&rsquo;excellentes qualit&eacute;s, qui ne parcourront que quelques m&egrave;tres avant de finir dans l&rsquo;assiette ou sur la garniture d&rsquo;une pizza.<\/p>\n<p>Et n&rsquo;oublions pas Nico Acompora, le fondateur de PizzAut &agrave; Cassina De&rsquo; Pecchi dans la province de Milan. Il a donn&eacute; vie &agrave; un restaurant dans lequel dix des douze collaborateurs sont des personnes autistes. On peut v&eacute;ritablement parler d&rsquo;un &eacute;tablissement durable, &eacute;galement sur le plan social.
