Une quantit&eacute; excessive de sel dans la p&acirc;te la rendra trop rigide : c&rsquo;est pourquoi la quantit&eacute; optimale de sel se situe entre 2 et 3%. Le sel a &eacute;galement des cons&eacute;quences sur les levures dans la mesure o&ugrave; il r&eacute;duira le d&eacute;veloppement de dioxyde de carbone et provoquera la mort de la cellule de levure par pression osmotique en la d&eacute;shydratant, le levage sera ainsi r&eacute;duit. C&rsquo;est pour cette raison qu&rsquo;il est conseill&eacute; de ne pas mettre la levure en contact direct avec le sel pendant un long moment.<\/p>\n<p>Le sel poss&egrave;de de grandes propri&eacute;t&eacute;s antiseptiques et antioxydantes permettant de conserver la p&acirc;te pendant plusieurs jours tout en emp&ecirc;chant la prolif&eacute;ration de bact&eacute;ries et en retardant l&rsquo;oxydation.<\/p>\n<p>Il am&eacute;liore aussi l&rsquo;aspect du produit fini en favorisant le brunissement de la pizza lors de la cuisson. Il conf&egrave;re ainsi une couleur vive et du croquant &agrave; la croute.<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>La p&acirc;te serait <b>collante, molle, de mauvaise consistance, et difficile &agrave; travailler.<\/b> Le levage n&rsquo;aurait pas fonctionn&eacute;, la caram&eacute;lisation serait absente et la fermentation serait excessive.<\/p>\n<p>Parmi les multiples effets du sel, il est impossible de ne pas mentionner ses cons&eacute;quences sur la sant&eacute;. Le go&ucirc;t est l&rsquo;un des &eacute;l&eacute;ments les plus importants lors de la d&eacute;gustation d&rsquo;un plat, mais il faut faire attention &agrave; trouver le juste &eacute;quilibre entre le sel de la p&acirc;te et celui de la garniture de la pizza.
