Il d&eacute;buta sa carri&egrave;re dans la petite ville d&rsquo;Avellino :&nbsp;&laquo;&nbsp;J&rsquo;ai v&eacute;cu une v&eacute;ritable ascension. Je travaillais des pizzas &agrave; la cro&ucirc;te &eacute;paisse avec des mati&egrave;res premi&egrave;res de haute qualit&eacute;. C&rsquo;&eacute;tait il y a huit ans, j&rsquo;avais vingt ans. Il m&rsquo;a fallu seulement deux jours aux c&ocirc;t&eacute;s de Gianfranco Lervolino pour rompre avec l&rsquo;univers des pizzaiolos traditionnels. J&rsquo;ai donc commenc&eacute; &agrave; travailler &agrave; contre-courant, avec une p&acirc;te &agrave; pizza &agrave; haut taux d&rsquo;hydratation et en utilisant le r&eacute;frig&eacute;rateur, une technique qui &agrave; cette &eacute;poque &eacute;tait un tabou absolu. J&rsquo;ai &eacute;galement d&eacute;velopp&eacute; une passion pour le processus de panification.<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/il-pomodoro-lirpinia-e-pasquale-polcaro-1.jpg\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>&nbsp;Au d&eacute;but, les gens trouvaient cela totalement absurde, puis les choses ont chang&eacute;. &raquo; Des id&eacute;es bien d&eacute;finies et un professionnalisme &agrave; un si jeune &acirc;ge : voil&agrave; ce qui d&eacute;finit Pasquale. Il poursuit : &laquo; J&rsquo;ai commenc&eacute; une aventure en solo, en allant travailler aupr&egrave;s des premi&egrave;res pizzerias m&rsquo;ayant accord&eacute; leur confiance. Gr&acirc;ce &agrave; ces exp&eacute;riences, j&rsquo;ai commenc&eacute; &agrave; conna&icirc;tre un certain succ&egrave;s. J&rsquo;ai v&eacute;cu mon exp&eacute;rience la plus significative &agrave; Sirignano, avec le chef Giovanni Arvonio dans la pizzeria Madremia. C&rsquo;est avec lui que j&rsquo;ai le plus appris car nous avons travaill&eacute; main dans la main, &agrave; partir de la levure m&egrave;re, dont je n&rsquo;&eacute;tais pourtant pas un grand amateur au d&eacute;but. Et m&ecirc;me si la levure m&egrave;re nous a grandement compliqu&eacute; la t&acirc;che, elle nous a &eacute;galement offert de vrais moments de bonheur : de la chambre de fermentation jusqu&rsquo;&agrave; la s&eacute;lection des toppings. Cela dit, nous avions peut-&ecirc;tre une vision trop futuriste des pizzas. Malheureusement, la pand&eacute;mie est arriv&eacute;e et j&rsquo;ai d&ucirc; me consacrer &agrave; d&rsquo;autres projets. &raquo;<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/il-pomodoro-lirpinia-e-pasquale-polcaro-2.jpg\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Puis, Pasquale Polcaro d&eacute;cida de d&eacute;m&eacute;nager dans le centre de Florence pour rejoindre le chef Gabriele Dani, puis la pizzeria Dissapore de Cecina ayant re&ccedil;u le prix Tre Spicchi de la c&eacute;l&egrave;bre maison d&rsquo;&eacute;dition italienne sp&eacute;cialis&eacute;e dans l&rsquo;&oelig;nogastronomie : le Gambero Rosso. Il participa &eacute;galement &agrave; un nouveau projet dans la pizzeria nomm&eacute;e Largo 9 &agrave; Florence (ayant &eacute;galement re&ccedil;u le prix Tre Spicchi). &laquo; J&rsquo;&eacute;tais intrigu&eacute; par la Toscane. Cette exp&eacute;rience devait &ecirc;tre temporaire mais finalement je suis tomb&eacute; amoureux de cet endroit et j&rsquo;y suis tr&egrave;s heureux. Ici, nous travaillons sur plusieurs p&acirc;tes, &agrave; la fois associ&eacute;es &agrave; la traditionnelle p&acirc;te napolitaine et &agrave; une p&acirc;te plut&ocirc;t &laquo; gourmet &raquo; moelleuse &agrave; l&rsquo;int&eacute;rieur et croustillante &agrave; l&rsquo;ext&eacute;rieur. C&rsquo;est avec ces p&acirc;tes &agrave; pizzas que nous r&eacute;alisons des essais afin de choisir des garnitures &eacute;labor&eacute;es, proches de la cuisine gastronomique. &raquo; &nbsp;Avant son exp&eacute;rience chez Madremia, Pasquale &eacute;tait sp&eacute;cialis&eacute; dans les produits de sa r&eacute;gion d&rsquo;origine, l&rsquo;Irpinia. En effet, il collabora m&ecirc;me au projet Quadrifoglio avec Davide Filadoro &agrave; Montemilet : &laquo; Je me suis compl&egrave;tement immerg&eacute; dans l&rsquo;&eacute;tude des produits du terroir. &raquo; Et c&rsquo;est ainsi qu&rsquo;il d&eacute;cida de pr&eacute;senter au concours <em>Emergente Pizza<\/em> un projet enti&egrave;rement bas&eacute; sur deux axes principaux : la r&eacute;gion de l&rsquo;Irpinia et le concept de valorisation d&rsquo;un produit.<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/il-pomodoro-lirpinia-e-pasquale-polcaro-3.jpg\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Il imagina donc un projet aussi beau que complexe : le r&eacute;cit du cycle de la vie de la tomate, de sa naissance &agrave; sa fin. &laquo;&nbsp;La vie de la tomate &raquo; est le nom de la pizza cr&eacute;&eacute;e par Pasquale. Avec une p&acirc;te cuite &agrave; la vapeur, elle poss&egrave;de diff&eacute;rentes textures gr&acirc;ce aux &eacute;tapes de maturation de ce l&eacute;gume. L&rsquo;histoire de cette pizza d&eacute;bute dans la terre, l&agrave; o&ugrave; la tomate prend vie, avec un crumble compos&eacute; de cacao amer et de tomate douce. Puis, les graines de basilic repr&eacute;sentent le moment o&ugrave; les premi&egrave;res pousses commencent &agrave; &eacute;merger. On y retrouve ensuite les diff&eacute;rentes couleurs de la tomate : le vert, lorsqu&rsquo;elle n&rsquo;est pas m&ucirc;re avec de fines lamelles ; le jaune avec une gel&eacute;e de tomates jaunes, l&rsquo;orange avec une gel&eacute;e de vinaigre. Puis, le rouge avec un confit de tomates Datterino et de l&rsquo;essence de tomates San Marzano. La fin du cycle de vie prend la forme d&rsquo;une cr&egrave;me de tomate ferment&eacute;e.&nbsp;&laquo;&nbsp;Pour moi, cette pizza repr&eacute;sente la vie&nbsp;&raquo; confie Pasquale. Et ce n&rsquo;est encore que le d&eacute;but pour ce jeune chef prometteur.<\/p>\n<\/div><\/div>\n<div class=\"shared-content \">\n
