Pourquoi est-il n&eacute;cessaire de surveiller la temp&eacute;rature de la p&acirc;te?<\/p>\n<p>&nbsp;<\/p>\n<p>Tous les professionnels savent que <strong>la p&acirc;te parfaite n&rsquo;existe pas<\/strong>, mais ils restent pourtant toujours &agrave; sa recherche. En r&eacute;alit&eacute;, il est presque possible d&rsquo;atteindre la perfection en pr&ecirc;tant attention aux d&eacute;tails tels que : le choix de la farine, la technique de production, le poids des ingr&eacute;dients, l&rsquo;eau, le contr&ocirc;le des temp&eacute;ratures et des temps d&#8217;emp&acirc;tement ainsi que la gestion du levage et de la maturation de la p&acirc;te.<\/p>\n<p>Dans cet article, nous avons souhait&eacute; souligner l&rsquo;importance du contr&ocirc;le des temp&eacute;ratures de la p&acirc;te, qui est un aspect essentiel de la gestion du levage.<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n\t<\/div>\n<\/p><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/temp-impasto-1.jpg\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>La temp&eacute;rature conseill&eacute;e pour une p&acirc;te &agrave; pizza est comprise entre 22&deg;C et 26&deg;C. Il est n&eacute;cessaire de finir la pr&eacute;paration de la p&acirc;te &agrave; une certaine temp&eacute;rature afin d&rsquo;obtenir une gestion &eacute;quilibr&eacute;e du processus de levage. <strong>La temp&eacute;rature optimale de la p&acirc;te est atteignable en analysant quelques facteurs<\/strong> qui, m&ecirc;me pendant l&#8217;emp&acirc;tement, auront une influence sur le produit final. La temp&eacute;rature de la farine, de l&rsquo;environnement et de l&rsquo;eau, ainsi que la hausse de temp&eacute;rature g&eacute;n&eacute;r&eacute;e par l&rsquo;action du p&eacute;trin sont des facteurs d&eacute;terminants dans la gestion de la production de la p&acirc;te. Les trois premiers facteurs sont facilement mesurables avec un thermom&egrave;tre, tandis que le dernier facteur d&eacute;pend du p&eacute;trin utilis&eacute;.<\/p>\n<p>Il existe trois types de p&eacute;trins dans le commerce : le p&eacute;trin &agrave; spirales, plus lent, qui g&eacute;n&egrave;re une hausse de temp&eacute;rature de 3&deg;C en moyenne; le p&eacute;trin &agrave; bras plongeants qui g&eacute;n&egrave;re une hausse de temp&eacute;rature autour de 6&deg;C; et le p&eacute;trin &agrave; spirale, le plus performant, qui g&eacute;n&egrave;re une hausse de temp&eacute;rature d&rsquo;environ 9&deg;C en moyenne.<\/p>\n<p><strong>Afin de contr&ocirc;ler la temp&eacute;rature finale de la p&acirc;te, il est essentiel de mesurer la temp&eacute;rature de l&rsquo;eau<\/strong>, qui est le seul &eacute;l&eacute;ment que nous pouvons modifier. Il est possible de calculer avec pr&eacute;cision la temp&eacute;rature de l&rsquo;eau qui sera utilis&eacute;e afin de terminer la pr&eacute;paration de la p&acirc;te et d&rsquo;atteindre la temp&eacute;rature d&eacute;sir&eacute;e. Cette formule prend en compte la temp&eacute;rature de la farine, de l&rsquo;environnement et le degr&eacute; de surchauffe du p&eacute;trin choisi.<\/p>\n<p>Par exemple, si l&rsquo;on souhaite terminer la p&acirc;te &agrave; une temp&eacute;rature de 22&deg;C, il nous faudra multiplier la temp&eacute;rature finale d&eacute;sir&eacute;e par 3 (22&#215;3), soustraire au r&eacute;sultat obtenu la somme des trois valeurs d&eacute;crites pr&eacute;c&eacute;demment (T. Farine, T. Environnement, T. P&eacute;trin). Le r&eacute;sultat obtenu sera la temp&eacute;rature de l&rsquo;eau &agrave; ajouter &agrave; la p&acirc;te.<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n\t<\/div>\n<\/p><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/temp-impasto-2.jpg\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Comme nous l&rsquo;avons observ&eacute; pr&eacute;c&eacute;demment, la temp&eacute;rature finale de la p&acirc;te fait partie des facteurs internes les plus importants, mais la <strong>capacit&eacute; fermentaire et les propri&eacute;t&eacute;s physiques de la p&acirc;te sont &eacute;galement influenc&eacute;s par d&rsquo;autres facteurs<\/strong>: la qualit&eacute; de la farine, la quantit&eacute; de sucres simples pr&eacute;sents, la pr&eacute;sence de malt et le pourcentage en sel.<\/p>\n<p>Les facteurs externes qui influencent le levage sont la temp&eacute;rature et l&rsquo;humidit&eacute; de l&rsquo;environnement. L&rsquo;action de la levure, et par extension le levage, d&eacute;pendent de la temp&eacute;rature. Entre 2-4&deg;C, l&rsquo;activit&eacute; de la levure est tr&egrave;s faible, elle produit peu de dioxyde de carbone et le gonflement de la p&acirc;te est ralenti. &Agrave; une temp&eacute;rature comprise entre 4-6&deg;C, l&rsquo;activit&eacute; de la levure commence &agrave; augmenter. Entre 20-30&deg;C, l&rsquo;activit&eacute; de la levure augmente de fa&ccedil;on exponentielle, <strong>en atteignant les conditions id&eacute;ales pour la fermentation &agrave; 28-30&deg;C<\/strong>.<br \/>\nTerminer la pr&eacute;paration de la p&acirc;te &agrave; la bonne temp&eacute;rature permet d&rsquo;&eacute;quilibrer parfaitement le processus de levage, surtout si la maturation et le levage ont lieu au r&eacute;frig&eacute;rateur. La temp&eacute;rature interne de la p&acirc;te est &eacute;galement tr&egrave;s importante car si l&rsquo;on d&eacute;cidait de terminer sa production de p&acirc;te sans effectuer de contr&ocirc;les, le r&eacute;sultat ne serait pas constant. Si la p&acirc;te est trop froide, la mettre au r&eacute;frig&eacute;rateur ne permettrait pas de d&eacute;clencher le processus de levage. Dans l&rsquo;hypoth&egrave;se o&ugrave; la p&acirc;te serait trop chaude, le levage serait acc&eacute;l&eacute;r&eacute; et la gestion de la p&acirc;te serait plus difficile que d&rsquo;habitude.<\/p>\n<\/div><\/div>\n<div class=\"shared-content \">\n            \t\t<\/div>\n","protected":false},"excerpt":{"rendered":"<p>La p\u00e2te parfaite existe-t-elle?
