Ces douceurs qui nous &eacute;voquent g&eacute;n&eacute;ralement des souvenirs agr&eacute;ables de notre enfance. Au restaurant, bien que la tendance actuelle veuille que nos desserts soient de moins en moins sucr&eacute;s, le moment du dessert n&rsquo;est pas &agrave; oublier ! La fin d&rsquo;un repas est souvent l&rsquo;une des &eacute;tapes de l&rsquo;exp&eacute;rience gustative dont on se souvient le plus facilement, d&rsquo;autant plus si le dernier plat n&rsquo;&eacute;tait pas &agrave; la hauteur des autres. Que nous parlions du fameux plateau de fromages ou des v&eacute;ritables p&acirc;tisseries, le dernier plat se doit d&rsquo;&ecirc;tre esth&eacute;tique mais surtout d&eacute;licieux! Les pizzerias devenant de plus en plus bistronomiques, quels sont les meilleurs desserts &agrave; proposer &agrave; la carte ? Si en Italie, les pizzerias traditionnelles proposent encore des truffes au chocolat, des profiteroles ou d&rsquo;autres p&acirc;tisseries &agrave; la qualit&eacute; discutable, les meilleures pizzerias ont d&eacute;sormais toutes d&eacute;velopp&eacute; une gamme de desserts digne de ce nom. Mais ces gammes ne sont pas seulement compos&eacute;es de desserts traditionnels, car la pizza peut se pr&ecirc;ter &agrave; des milliers d&rsquo;interpr&eacute;tations diff&eacute;rentes.<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p style=\"text-align: justify;\">C&rsquo;est ainsi que la pizza sucr&eacute;e a fait son apparition. Si elle &eacute;tait au d&eacute;but simplement recouverte de nutella ou d&rsquo;autres p&acirc;tes &agrave; tartiner, certains c&eacute;l&egrave;bres pizzaiolos se sont empar&eacute;s du ph&eacute;nom&egrave;ne et ont con&ccedil;u leur propre interpr&eacute;tation de la pizza sucr&eacute;e. &Agrave; commencer par <strong>Franco Pepe<\/strong> du restaurant <strong>Pepe<\/strong> in Grani, dans la ville de Caiazzo, un professionnel prim&eacute; de nombreuses fois et qui a fait preuve d&rsquo;une grande polyvalence avec sa pizza AnaNascosta, une pizza &agrave; l&rsquo;ananas. Mais n&rsquo;oublions pas sa pizza Crisommola aux abricots du V&eacute;suve, acclam&eacute;e par la critique du <strong>Gambero Rosso<\/strong>. Cette pizza est compos&eacute;e d&rsquo;une p&acirc;te frite, agr&eacute;ment&eacute;e d&rsquo;une ricotta di bufala, de zestes de citron, de noisettes toast&eacute;s, d&rsquo;olives de Caiazzo d&eacute;shydrat&eacute;es et de feuilles de menthe. L&rsquo;&eacute;l&eacute;ment principal qui la compose est une confiture issue d&rsquo;abricots Crisommole, une vari&eacute;t&eacute; en voie de disparition poss&eacute;dant le statut <strong>Slow Food<\/strong>.&nbsp;<br \/>\nEt puis il y a <strong>Gianni di Lella<\/strong>, un autre pr&eacute;curseur du genre, originaire de Campanie avec un tr&egrave;s fort accent de Mod&egrave;ne, qui d&eacute;plore la banalisation de la pizza sucr&eacute;e de la part de ses confr&egrave;res.&nbsp;<\/p>\n<\/div><\/div>\n<div class=\"stripe-quote \">\n<div class=\"stripe-background\">\n    <img decoding=\"async\" src=\"\" alt=\"\" \/>\n<\/div>\n<div class=\"text-description\">\n\t\u00abJ\u2019adore \u00e9tudier les desserts traditionnels tels que la zuppa inglese ou la tarte tatin, pour essayer de les associer \u00e0 l\u2019art de la pizza. Voici donc mes interpr\u00e9tations de la pizza sucr\u00e9e\u00bb<\/div>\n<\/p><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p style=\"text-align: justify;\">Nous dit-il en nous pr&eacute;sentant sa &laquo;Margherita non-margherita&raquo; &agrave; la meringue italienne, confiture de tomates &#8211; fraises &#8211; basilic, puis sa &laquo;Tiramis&ugrave;&raquo;, compos&eacute;e d&rsquo;une base caram&eacute;lis&eacute;e au sucre de canne, d&rsquo;une glace au caf&eacute; ajout&eacute;e sur la pizza froide, d&rsquo;une chantilly au mascarpone au siphon, de poudre de caf&eacute;, de chocolat noir et d&rsquo;une pinc&eacute; d&rsquo;anis &eacute;toil&eacute;.<br \/>\nDans la ville de Montepaone, en Calabre, nous retrouvons <strong>Roberto Davanzo<\/strong>, aussi surnomm&eacute; <strong>Bob<\/strong>, le fondateur du restaurant <strong>Bob Alchimia a Spicchi<\/strong>. Il propose des &laquo;pizzas au lait&raquo; telles que la &laquo;Ricotta et Bergamote&raquo;, r&eacute;compens&eacute;e en 2020 par le prix de la meilleure pizza sucr&eacute;e par le <strong>Gambero Rosso<\/strong>: une pizza originale &agrave; base de cr&egrave;me de ricotta &agrave; la bergamote, coulis et gel&eacute;e de bergamote, crumble de r&eacute;glisse, amandes grill&eacute;es et menthe. On pense &eacute;galement &agrave; sa cr&eacute;ation &laquo;dolci al trancio&raquo; &#8211; dessert &agrave; la part, comme le &laquo;Thym et Citron, noisette et caf&eacute;&raquo;, un hommage &agrave; <strong>Federico Cari<\/strong> avec son cr&eacute;meux &agrave; la noisette, crumble &agrave; la f&egrave;ve tonka, sorbet au thym et citron et une r&eacute;duction de caf&eacute; amer.<br \/>\nEnfin, c&rsquo;est &agrave; Travestere, un quartier de Rome, que se trouve la pizzeria <strong>Illuminati de Pier Daniele Seu<\/strong>, qui ne manque pas d&rsquo;inventivit&eacute;, m&ecirc;me pour les pizzas sucr&eacute;es. Vous retrouverez au menu la &laquo;Mont Blanc&raquo;, &agrave; base de pur&eacute;e de marrons, cr&egrave;me fouett&eacute;e, p&acirc;te de chataignes au rhum, copeaux de chocolat, crumble de ch&acirc;taigne et meringue. On pense &eacute;galement &agrave; sa pizza &laquo;Caff&egrave; Leccese&raquo;, &agrave; la cr&egrave;me de lait d&rsquo;amande, accompagn&eacute;e de grains de caf&eacute; recouverts de chocolat fondu, cr&egrave;me et gel&eacute;e de caf&eacute;, gel&eacute;e de Bailey&rsquo;s et crumble d&rsquo;amandes.&nbsp;<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/header_sweetpizza.jpg\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p style=\"text-align: justify;\">Si ses id&eacute;es sont diverses et vari&eacute;es, les saveurs le sont tout autant et le public en est conquis! D&rsquo;un point de vue gastronomique, c&rsquo;est une id&eacute;e gagnante, d&rsquo;autant plus que les pizzas sont r&eacute;alis&eacute;es par un professionnel. &Eacute;videmment, la pizza sucr&eacute;e ne remplacera pas r&eacute;ellement le dessert car il faudra encore du temps pour vaincre la r&eacute;ticence des consommateurs. Pourtant, le chemin est tout trac&eacute; pour la pizza qui s&rsquo;approche de plus en plus d&rsquo;un plat gastronomique.<br \/>\nEt qu&rsquo;en est-il des accords? Associer sa pizza avec un bon verre de vin n&rsquo;est d&eacute;sormais plus un tabou et l&rsquo;on commence &agrave; comprendre que ces vins peuvent jouer un r&ocirc;le important lors du repas.
