De nombreuses tendances ayant d&eacute;but&eacute; dans le monde de la cuisine, commencent d&eacute;sormais &agrave; s&rsquo;immiscer dans le monde de la pizza.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>La pizza et l&rsquo;univers qui l&rsquo;entourent ont r&eacute;cemment &eacute;t&eacute; victimes d&rsquo;une v&eacute;ritable r&eacute;volution <\/strong>qui n&rsquo;a pourtant en aucun cas entach&eacute; les origines de ce noble plat, issu toutefois de la street food italienne. Ce plat a su &eacute;voluer au point de se hisser jusqu&rsquo;aux sommets en s&rsquo;octroyant les honneurs des critiques gastronomiques les plus renomm&eacute;s.<\/p>\n<\/div><\/div>\n<div class=\"stripe-quote \">\n<div class=\"stripe-background\">\n    <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/background-quote.jpg?1600183999\" alt=\"\" \/>\n<\/div>\n<div class=\"text-description\">\n\tQUELS SONT LES \u00c9L\u00c9MENTS QUI DISTINGUENT UNE PIZZA GOURMET D\u2019UNE PIZZA CLASSIQUE?<\/div>\n<\/p><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Les pizzaiolos napolitains ont r&eacute;cemment fait entrer le v&eacute;ritable <strong>art de la pizza au patrimoine mondial de l&rsquo;Unesco<\/strong>, cr&eacute;ant ainsi une premi&egrave;re fronti&egrave;re entre la traditionnelle pizza napolitaine, un produit inimitable, et les autres pizzas ne b&eacute;n&eacute;ficiant pas de cette appellation.<strong> Mais comment distinguer une pizza ordinaire d&rsquo;une pizza gourmet<\/strong>? Il nous faut d&rsquo;abord prendre du recul sur la situation actuelle. Partons du fait que, m&ecirc;me &agrave; Naples, beaucoup de choses ont chang&eacute; depuis la cr&eacute;ation de la pizza, notamment concernant l&rsquo;augmentation de la qualit&eacute; du produit : que ce soit gr&acirc;ce &agrave; la farine, le levage ou m&ecirc;me la garniture. En effet, la pizza italienne a connu une importante expansion et poss&egrave;de des caract&eacute;ristiques diff&eacute;rentes selon les r&eacute;gions.<\/p>\n<p>Elle continue de faire l&rsquo;objet de nombreuses pol&eacute;miques provenant g&eacute;n&eacute;ralement d&rsquo;habitants de la r&eacute;gion de Campanie. Beaucoup sont encore tr&egrave;s r&eacute;ticents concernant l&rsquo;existence m&ecirc;me de pizzas <strong>diff&eacute;rentes de la pizza traditionnelle<\/strong>. Certains banissent totalement l&rsquo;utilisation de fours qui ne sont pas strictement &agrave; bois, alors m&ecirc;me que l&rsquo;Association de la V&eacute;ritable Pizza Napolitaine a r&eacute;cemment <strong>bris&eacute; le tabou et a consenti l&rsquo;utilisation du four &eacute;lectrique.<\/strong><\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/trend-pizze-gourmet-1.jpg\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p><strong>Les pr&eacute;misses de la tendance gourmet <\/strong>ont &eacute;t&eacute; lanc&eacute;es par Simone Padoan, dans la pizzeria I Tigli situ&eacute;e &agrave; San Bonifacio dans la r&eacute;gion de V&eacute;rone. <strong>Avec son style rigoureux, il a cr&eacute;&eacute; une pizza compl&egrave;tement aux antipodes de la pizza classique<\/strong>, &agrave; la grande popularit&eacute; et aux prix raisonnable&nbsp;: une v&eacute;ritable tendance. De nombreux adeptes commenc&egrave;rent alors tour &agrave; tour &agrave; servir des pizzas dont la garniture &eacute;tait (et est encore) proche d&rsquo;un plat gastronomique. &Agrave; quelques pas de l&rsquo;enseigne de Simone Padoan se trouve un grand chef pizzaiolo, une personnalit&eacute; m&eacute;diatique italienne : Renato Bosco. Puis, d&rsquo;autres r&eacute;f&eacute;rences dans le milieu comme Matteo Aloe, d&rsquo;origine calabraise, ou Davide Fiorentini de la pizzeria O&rsquo; Fiore Mio. Nous pensons &eacute;galement &agrave; Gianni di Lella de la pizzeria La Bufala situ&eacute;e &agrave; Maranello et ses id&eacute;es audacieuses comme la pizza sucr&eacute;e. Pr&egrave;s de Turin, on peut retrouver la pizzeria SP 143 de Giulio Grasso, qui regorge de pizzas con&ccedil;ues en partenariat avec le <strong>chef &eacute;toil&eacute; <\/strong>Igor Macchia.<\/p>\n<p>En Toscane, nous pouvons retrouver un napolitain : Gennaro Battiloro, de la pizzeria Battil&rsquo;oro, qui a &eacute;pous&eacute; l&rsquo;art de la pizza en <strong>combinant les ingr&eacute;dients de ses garnitures &agrave; la mixologie.<\/strong> En allant un peu plus au sud, Gabriele Bonci et Giancarlo Casa, respectivement boulanger et pizzaiolo, sont de v&eacute;ritables porte-drapeaux de la capitale et poss&egrave;dent des styles diff&eacute;rents mais tout aussi int&eacute;ressants. Puis, Bob Alchimia a lanc&eacute; &agrave; Spicchi, pr&egrave;s de Catanzaro, une tendance amusante mais un peu dangereuse (surtout pour les v&ecirc;tements!). En effet, sa d&eacute;licieuse pizza ne se mange qu&rsquo;avec les mains. Et enfin, <strong>parmi les fervents cr&eacute;ateurs de tendances,<\/strong> nous retrouvons Denis Lovatel de la pizzeria Da Ezio situ&eacute;e dans le quartier de Belluno &agrave; Alano di Piave. Il a cr&eacute;&eacute; une pizza ronde &laquo;&nbsp;crunch&nbsp;&raquo;, &agrave; la p&acirc;te l&eacute;g&egrave;re et au croustillant presque l&eacute;gendaire. Il est &eacute;galement connu pour son engagement sur des th&egrave;mes tels que le <strong>d&eacute;veloppement durable<\/strong> et a r&eacute;cemment cr&eacute;&eacute; une <strong>garniture totalement v&eacute;g&eacute;tale &agrave; base de past&egrave;que afin de remplacer les prot&eacute;ines d&rsquo;origine animale sur la pizza.<\/strong><\/p>\n<p>Si ces chefs et leurs cr&eacute;ations ne sont que quelques exemples des diff&eacute;rentes tendances &laquo;&nbsp;gourmet&nbsp;&raquo; dans le domaine de la pizza, <strong>comment pourrait-on alors d&eacute;finir la v&eacute;ritable pizza gourmet?<\/strong> Le vrai mot d&rsquo;ordre, et cela peut sembler banal, est la qualit&eacute;. <strong>La qualit&eacute; des ingr&eacute;dients<\/strong> doit &ecirc;tre absolue et ne doit pas seulement se limiter &agrave; la garniture. Il faut consid&eacute;rer ce concept au sens large, en pensant &eacute;galement au <strong>choix de la farine utilis&eacute;e pour la p&acirc;te &agrave; pizza<\/strong>.<strong> L&rsquo;exp&eacute;rience et le savoir-faire avec lesquels le pizzaiolo travaille la pizza<\/strong>, sa gestion du levage et de la cuisson, sa <strong>capacit&eacute; &agrave; exp&eacute;rimenter <\/strong>et &agrave; ne pas se limiter simplement &agrave; sa premi&egrave;re r&eacute;ussite : toutes ces caract&eacute;ristiques lui permettront de se frayer un chemin innovant et de sortir des sentiers battus.<\/p>\n<p><strong>Celui qui est capable de cr&eacute;er la tendance est le seul capable de la d&eacute;finir.<\/strong><\/p>\n<\/div><\/div>\n<div class=\"shared-content \">\n            \t\t<\/div>\n","protected":false},"excerpt":{"rendered":"<p>L\u2019univers de la pizza est aujourd&rsquo;hui en constante effervescence.
