Habituellement, lorsque l&rsquo;on pense &agrave; la farine, on pense g&eacute;n&eacute;ralement &agrave; la farine de bl&eacute; tendre. Le mot semoule est quant &agrave; lui utilis&eacute; pour d&eacute;signer la farine de bl&eacute; dur. La farine est largement utilis&eacute;e dans la cuisine et la p&acirc;tisserie. Elle est l&rsquo;ingr&eacute;dient principal qui compose la recette du pain et de la pizza.<\/p>\n<p>Le mot &laquo;&nbsp;farine&nbsp;&raquo; n&rsquo;est pas exclusif au bl&eacute; et correspond &eacute;galement au produit de la mouture de nombreuses autres c&eacute;r&eacute;ales. Par ailleurs, les c&eacute;r&eacute;ales occupent 50% de la superficie mondiale d&eacute;di&eacute;e aux terres arables. Le bl&eacute; tendre et le bl&eacute; dur font partie des plus de 8700 esp&egrave;ces de bl&eacute; diff&eacute;rentes. Cependant, bien que similaires en termes de noms, ces esp&egrave;ces sont totalement distinctes du point de vue g&eacute;n&eacute;tique et organoleptique.<\/p>\n<p>La qualit&eacute; du bl&eacute; d&eacute;pend de l&rsquo;esp&egrave;ce, du climat, de la fertilisation et du sol. Il est possible d&rsquo;obtenir de la farine en pr&ecirc;tant attention &agrave; ces &eacute;l&eacute;ments et en suivant un processus de mouture. Une farine de qualit&eacute; sup&eacute;rieure peut &ecirc;tre obtenue gr&acirc;ce &agrave; un processus de nettoyage minutieux r&eacute;alis&eacute; par une s&eacute;rie de machines.<\/p>\n<p>L&rsquo;utilisation de la trieuse optique est fondamentale car elle analyse et &eacute;limine les grains de bl&eacute; d&eacute;fectueux, qui diff&egrave;rent des standards chromatiques ou qui poss&egrave;dent des caract&eacute;ristiques non conformes. La farine est ainsi beaucoup plus salubre. Par la suite, le bl&eacute; est stock&eacute; dans des silos particuliers en fonction de l&rsquo;esp&egrave;ce, la provenance et le lot. Puis, un examen relatif &agrave; l&rsquo;humidit&eacute; du bl&eacute; est effectu&eacute;. Le bl&eacute; doit &ecirc;tre suffisamment mouill&eacute; pour que la mouture ne soit pas trop agressive. Le temps de mouture varie de 24 &agrave; 48 heures. La mouture est la derni&egrave;re &eacute;tape permettant de transformer les grains de bl&eacute; en farine.<\/p>\n<p>La l&eacute;gislation italienne pr&eacute;voit une classification par &laquo;&nbsp;TYPE&nbsp;&raquo; bas&eacute;e sur la teneur en cendres de la farine, c&rsquo;est-&agrave;-dire la pr&eacute;sence de sels min&eacute;raux. Les sels min&eacute;raux sont principalement contenus dans le son de bl&eacute;. C&rsquo;est la raison pour laquelle les farines compl&egrave;tes ayant une grande proportion de son de bl&eacute; poss&egrave;dent une teneur &eacute;lev&eacute;e en cendres. Afin de quantifier le pourcentage de cendres, il est possible de r&eacute;aliser un test en ins&eacute;rant un &eacute;chantillon de farine dans un four atteignant les 500\/600&deg;C et qui soit capable de ne pas alt&eacute;rer l&rsquo;&eacute;tat du sel tout en br&ucirc;lant le reste de l&rsquo;&eacute;chantillon. La farine compl&egrave;te poss&egrave;de une teneur en cendres comprise entre 1,30 % et 1,70 %, la farine de type 2 poss&egrave;de une teneur en cendres de 0,95 %, la farine de type 1 poss&egrave;de une teneur en cendres de 0,80 % et la farine de type 0 une teneur en cendres de 0,65 %. C&rsquo;est la farine 00 qui contient la plus faible teneur en cendres avec 0,55 %.<\/p>\n<p>La farine compl&egrave;te contient plus de sels min&eacute;raux que la farine 00 et contient &eacute;galement beaucoup de fibres et de vitamines. Ces &eacute;l&eacute;ments sont surtout pr&eacute;sents &agrave; l&rsquo;int&eacute;rieur des couches externes du grain de bl&eacute;. Par ailleurs, ces couches sont &eacute;limin&eacute;es lors de la production de la farine classique 00. Il est essentiel de souligner l&rsquo;importance des fibres dans notre alimentation lorsque l&rsquo;on parle de farine compl&egrave;te. En effet, la majeure partie des fibres pr&eacute;sentes dans la farine compl&egrave;te sont insolubles : la cellulose et la lignine poss&egrave;dent une action b&eacute;n&eacute;fique au niveau gastro-intestinal, donnent une sensation de sati&eacute;t&eacute; et r&eacute;gulent les fonctions intestinales. La farine compl&egrave;te contient &eacute;galement des fibres solubles, dans une proportion bien moins &eacute;lev&eacute;e. Ces derni&egrave;res ne sont pas absorb&eacute;es par notre corps comme peuvent l&rsquo;&ecirc;tre les fibres insolubles. Elles assainissent la flore bact&eacute;rienne, diminuent le taux de cholest&eacute;rol et &eacute;vitent les pics glyc&eacute;miques caract&eacute;ristiques des farines poss&eacute;dant une faible quantit&eacute; de cendres.<\/p>\n<p>La farine compl&egrave;te, qu&rsquo;elle soit de bl&eacute;, d&rsquo;&eacute;peautre, d&rsquo;amarante, d&rsquo;avoine ou m&ecirc;me de Kamut, est une alternative saine &agrave; la farine classique. Elle n&rsquo;est pas seulement destin&eacute;e aux intol&eacute;rants &agrave; la farine classique mais &eacute;galement &agrave; tous ceux qui souhaitent la d&eacute;couvrir.
