Voici son histoire.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Lorsque l&rsquo;on pense au safran<\/strong>, l&rsquo;une des premi&egrave;res choses qui nous vient &agrave; l&rsquo;esprit peut &ecirc;tre le c&eacute;l&egrave;bre risotto &agrave; la milanaise, dont il est facile de se rappeler notamment gr&acirc;ce &agrave; sa magnifique et embl&eacute;matique couleur jaune vif. Et ce alors m&ecirc;me que cette plante de la famille des Iridaceae poss&egrave;de une <strong>histoire longue et fascinante<\/strong>. Cultiv&eacute;e en Asie mineure et dans plusieurs pays m&eacute;diterran&eacute;ens, elle est aussi pr&eacute;sente dans plusieurs r&eacute;gions italiennes en diff&eacute;rents degr&eacute;s de qualit&eacute; : en Abruzzes et Marches, Sicile, Calabre, Sardaigne ou encore en Toscane et en Ombrie.&nbsp; Elle se propage aussi jusqu&rsquo;au nord de l&rsquo;Italie. Provenant d&rsquo;Anatolie, elle est <strong>mentionn&eacute;e dans un papyrus &eacute;gyptien de 1550 avant J.C. <\/strong>D&rsquo;apr&egrave;s la mythologie grecque, cette plante serait n&eacute;e de l&rsquo;amour r&eacute;ciproque entre un magnifique jeune homme nomm&eacute; Krokus envers une nymphe appel&eacute;e Smilax. Cependant, cette derni&egrave;re &eacute;tait la bien-aim&eacute;e du dieu Herm&egrave;s, qui se venga en transformant Krokus en fleur. Au fur et &agrave; mesure des si&egrave;cles, le safran a &eacute;t&eacute; utilis&eacute; de beaucoup de fa&ccedil;ons diff&eacute;rentes. Il a &eacute;t&eacute; cit&eacute; par Hom&egrave;re, Virgile et Ovide dans leurs oeuvres. Dans l&rsquo;Iliade par exemple, il est racont&eacute; qu&rsquo;Isocrate utilisait le safran pour parfumer ses coussins et qu&rsquo;il <strong>&eacute;tait aussi courant d&rsquo;utiliser cette &eacute;pice pour parfumer le plancher<\/strong>. Les habitants de Sidon et de Tyr les utilisaient pour colorer les voiles des mari&eacute;es, et les pr&ecirc;tres pour en diffuser le parfum dans les temples &agrave; l&rsquo;occasion des grandes c&eacute;r&eacute;monies religieuses. La production de safran en tant que produit de luxe augmenta au temps de l&rsquo;Empire Romain, afin de parfumer les habitations et les bains imp&eacute;riaux.<\/p>\n<\/div><\/div>\n<div class=\"stripe-quote \">\n<div class=\"stripe-background\">\n    <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/background-quote.jpg?1600183999\" alt=\"\" \/>\n<\/div>\n<div class=\"text-description\">\n\tProvenant d\u2019Anatolie, le safran est mentionn\u00e9 dans un papyrus \u00e9gyptien datant de 1550 avant J.C.<\/div>\n<\/p><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>La culture du safran perdura ensuite &agrave; Byzance ou dans les pays arabes. C&rsquo;est en l&rsquo;an 1000 environ que les arabes ont commenc&eacute; &agrave; r&eacute;introduire la culture du safran en Europe, et plus pr&eacute;cis&eacute;ment en Espagne. D&rsquo;apr&egrave;s Dioscoride ou Pline, <b>le safran poss&egrave;derait des vertus aphrodisiaques<\/b> car il serait capable d&rsquo;accro&icirc;tre fortement l&rsquo;activit&eacute; sexuelle des hommes et d&rsquo;augmenter le d&eacute;sir des femmes. <b>Dans la cuisine du Moyen-&Acirc;ge <\/b>et de la Renaissance, il &eacute;tait utilis&eacute; pour son go&ucirc;t mais aussi pour sa couleur proche de l&rsquo;or en tant qu&rsquo;<b>antidote contre tous les maux<\/b>. Cette plante a gard&eacute; le nom de Crocus pendant tout le Moyen-&Acirc;ge, jusqu&rsquo;&agrave; ce que <b>les arabes le changent en <i>za&rsquo;faran<\/i><\/b>, d&eacute;riv&eacute; du <b>perse <i>sahafran<\/i><\/b>, en r&eacute;f&eacute;rence &agrave; la couleur jaune intense que les stigmates lib&egrave;rent apr&egrave;s la cuisson. En Italie, la <b>culture du safran a commenc&eacute; &agrave; &ecirc;tre document&eacute;e &agrave; partir du XIII si&egrave;cle.<\/b> On raconte que le cardinal Richelieu utilisait une confiture au safran comme excitant sexuel, ou que le chirurgien fran&ccedil;ais Ambroise Par&eacute; conseillait aux impuissants de manger du risotto assaisonn&eacute; avec cette &eacute;pice. Au cours du 19&egrave;me si&egrave;cle, le corps scientifique &eacute;tait divis&eacute; entre ceux qui pensaient que le safran rendaient les hommes invalides et ceux qui pensaient qu&rsquo;il &eacute;tait un excitant pour la libido ; Tandis qu&rsquo;au 20&egrave;me si&egrave;cle il &eacute;tait encore conseill&eacute; contre la st&eacute;rilit&eacute; des femmes.<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/zafferano-header.jpg\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>D&rsquo;apr&egrave;s la m&eacute;decine naturelle, les stigmates de la plante peuvent &ecirc;tre prescrits en tant que rem&egrave;de contre les rhumatismes, la goutte, le mal de dent et comme traitement abortif. &Agrave; une &eacute;poque, <b>poss&eacute;der du safran &eacute;tait un symbole de richesse <\/b>: en effet, pour obtenir un kilo de stigmates, il faut cultiver plus de 200 000 fleurs. De nos jours, il existe encore une tradition dans certaines r&eacute;gions du Sud de l&rsquo;Italie selon laquelle il faudrait disposer des fleurs de safran sur le lit des jeunes mari&eacute;s afin de leur souhaiter bonheur et f&eacute;licit&eacute;.<\/p>\n<p>Si le safran est aujourd&rsquo;hui utilis&eacute; dans les recettes de cuisine des grands chefs dans des plats sal&eacute;s ou sucr&eacute;s, <b>il est aussi utilis&eacute; dans les pizzerias<\/b>, mais avec parcimonie. Le pizzaiolo de l&rsquo;Alliance Cuochi e Pizzaioli Slow Food Luca Doro a utilis&eacute; le safran cultiv&eacute; sur la Terre de Labour en Campanie, dans des p&acirc;tes &agrave; pizza et des garnitures.<\/p>\n<p><b>La pizza au safran <\/b>a aussi &eacute;t&eacute; le pari relev&eacute; par Vincenzo Capuano de l&rsquo;&eacute;quipe Rossopomodoro Lab : <b>&agrave; mi chemin entre sa ville natale de Naples et sa ville de coeur Milan,<\/b> avec une p&acirc;te au safran et une garniture &agrave; base de provolone et de saucisse.
