Les vari&eacute;t&eacute;s se sont donc multipli&eacute;es, cr&eacute;&eacute;es puis supprim&eacute;es : qui ne se souvient pas du <strong>vin en barrique<\/strong>, tout d&rsquo;abord exalt&eacute; par la critique puis rejet&eacute;, sauf que la barrique n&rsquo;est pas et ne sera jamais un &eacute;l&eacute;ment bon ou mauvais pour un vin.<\/p>\n<p>Ceci n&rsquo;est qu&rsquo;un exemple parmi tant d&rsquo;autres dans un univers o&ugrave; se confondent certitudes absolues, dogmes et v&eacute;rit&eacute;s incontestables. Demandez &agrave; un vigneron ou &agrave; un producteur, et vous verrez qu&rsquo;une multitude de points de vue diff&eacute;rents existent, tous plus ou moins compatibles &agrave; l&rsquo;&oelig;nologie, une science flexible selon chacun. C&rsquo;est ainsi que sont n&eacute;s les <strong>vins &laquo;&nbsp;naturels&nbsp;&raquo; <\/strong>pour lesquels de nombreuses d&eacute;finitions existent et qui sont oppos&eacute;s aux vins &laquo;&nbsp;industriels&nbsp;&raquo;. Mais sommes-nous s&ucirc;rs que les m&eacute;thodes de vinification du paysan du coin ou de notre grand p&egrave;re soient meilleures que les nouvelles technologies qui nous facilitent grandement la t&acirc;che?<\/p>\n<p>Les questions pourraient encore &ecirc;tre multipli&eacute;es, surtout pour les restaurateurs proposant une carte des vins car il faut r&eacute;ussir &agrave; naviguer au milieu d&rsquo;une multitude d&rsquo;offres se m&ecirc;lant &agrave; une r&eacute;alit&eacute; plut&ocirc;t complexe. Trouver une carte des vins correcte et assez &eacute;labor&eacute;e au restaurant n&rsquo;est pas si difficile, m&ecirc;me si le choix est vaste : habituellement, la liste des bouteilles disponibles est plut&ocirc;t adapt&eacute;e &agrave; la note attribu&eacute;e au restaurant par les principaux guides gastronomiques r&eacute;alis&eacute;s sur le mod&egrave;le du Guide Michelin. Il est plut&ocirc;t logique m&ecirc;me si ce n&rsquo;est pas syst&eacute;matiquement le cas, de s&rsquo;attendre &agrave; un choix de vins plus large et raffin&eacute; de la part d&rsquo;un restaurant &eacute;toil&eacute; compar&eacute; &agrave; une simple pizzeria.<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n\t<\/div>\n<\/p><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/carta-vini-1.jpg\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Les exceptions existent et deviennent monnaie courante. Les restaurants tels que les pizzerias, plut&ocirc;t que de proposer quelques bi&egrave;res pseudo-artisanales ainsi que des bi&egrave;res pressions des g&eacute;ants du secteur, proposent d&eacute;sormais r&eacute;guli&egrave;rement <b>un large choix de vins de haute qualit&eacute;<\/b>. L&rsquo;originalit&eacute; des vins choisis pour la carte est &eacute;troitement li&eacute;e au niveau de qualit&eacute; de l&rsquo;&eacute;tablissement, et ce, peu importe son genre. Certaines cartes sont m&ecirc;me parfois un copier-coller d&rsquo;une s&eacute;lection de vins issus de la carte du distributeur, et les experts en la mati&egrave;re s&rsquo;en aper&ccedil;oivent rapidement.<\/p>\n<p>Ce n&rsquo;est pas si grave, mais la ligne de produits sera d&rsquo;une certaine fa&ccedil;on impos&eacute;e et conditionn&eacute;e par le fournisseur. Ainsi, un passionn&eacute; sera ravi de d&eacute;couvrir une carte originale compos&eacute;e de vari&eacute;t&eacute;s rares et insolites, issues de productions moins c&eacute;l&egrave;bres n&rsquo;ayant pas &eacute;t&eacute; prim&eacute;es mais poss&eacute;dant tout de m&ecirc;me une qualit&eacute; exceptionnelle et des prix peut-&ecirc;tre plus attractifs. Le choix d&eacute;pend donc beaucoup du degr&eacute; de passion et d&rsquo;investissement du restaurateur, qui peut d&eacute;cider de prendre du temps pour chercher et construire des associations de saveurs en parfait accord avec ses plats. <b>Cela ne signifie pas qu&rsquo;il faut proposer des centaines de vins &agrave; la client&egrave;le<\/b>, mais plut&ocirc;t privil&eacute;gier la qualit&eacute;. Il est aussi tr&egrave;s difficile de d&eacute;cider de renoncer aux vins issus de prestigieux domaines viticoles, tr&egrave;s en vogue et tant demand&eacute;s par la client&egrave;le. En effet, beaucoup se plaisent &agrave; exhiber leur prestigieuses bouteilles sur leurs r&eacute;seaux sociaux.<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n\t<\/div>\n<\/p><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/carta-vini-2.jpg\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Il est extr&ecirc;mement difficile de dissiper le mythe selon lequel la pizza s&rsquo;accompagnerait d&rsquo;une bi&egrave;re, c&rsquo;est pourquoi, tr&egrave;s rare sont les pizzerias qui n&rsquo;en proposent pas. <b>L&rsquo;association<\/b> entre la pizza et la bi&egrave;re <b>remonte aux ann&eacute;es 50<\/b>, lorsque certaines lois du 19&egrave; si&egrave;cle r&eacute;glementant la vente d&rsquo;alcool, interdisaient aux pizzerias de servir des boissons alcoolis&eacute;es avec un taux sup&eacute;rieur &agrave; 8%. C&rsquo;est donc pour cette raison que de nombreuses personnes ont pris cette habitude, plut&ocirc;t que de consommer leur pizza avec une bouteille de vin. Cependant, m&ecirc;me si les meilleures pizzerias poss&egrave;dent des techniques de levage et de maturation de la p&acirc;te qui lui permet d&rsquo;&ecirc;tre facilement dig&eacute;r&eacute;e par l&rsquo;organisme, additionner la levure contenue dans la pizza et celle contenue dans la bi&egrave;re n&rsquo;aide pas durant le processus de digestion.<\/p>\n<p>Il a &eacute;t&eacute; &eacute;tabli que le grand pr&eacute;curseur <b>Luigi Veronelli<\/b> sugg&eacute;rait d&rsquo;associer la pizza &agrave; l&rsquo;Aversa Asprinio, un vin blanc du sud de l&rsquo;Italie. La documentation sur ce sujet devient importante et rassemble des associations de sommeliers, des consortiums vinicoles et des pizzaiolos avis&eacute;s. Parmi ces derniers, on notera par exemple <b>Giancarlo de la Casa della Gatta Mangiona &agrave; Rome, les fr&egrave;res Francesco et Salvatore de Naples<\/b>, ou encore <b>Denis Lovatel de<\/b> la Pizzeria da Ezio &agrave; Alano di Piave en V&eacute;n&eacute;tie, qui poss&egrave;de par ailleurs une carte des vins remarquable dans laquelle il propose d&rsquo;y <b>associer un de ces vins &agrave; sa c&eacute;l&egrave;bre pizza &laquo;&nbsp;crunch&nbsp;&raquo;<\/b>. Beaucoup choisissent aussi de proposer des vins naturels, probablement pour leur grande versatilit&eacute; gastronomique : c&rsquo;est notamment le cas du novateur incontestable Simone Padoan de &laquo;&nbsp;I Tigli&nbsp;&raquo; &agrave; San Bonifacio. En tous cas, les crit&egrave;res &eacute;tablis afin de s&eacute;lectionner les vins d&rsquo;une carte doivent r&eacute;pondre aux exigences propres du restaurant, &eacute;tant donn&eacute; que les garnitures de certaines pizzas ressemblent de plus en plus &agrave; de la cuisine gastronomique.<\/p>\n<\/div><\/div>\n<div class=\"stripe-quote \">\n<div class=\"stripe-background\">\n    <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/background-quote.jpg?1600183999\" alt=\"\" \/>\n<\/div>\n<div class=\"text-description\">\n\t\u201cl\u2019origine dell\u2019abbinamento risale agli anni cinquanta del secolo scorso, quando nelle pizzerie, a causa di alcune limitazioni sulla somministrazione di alcolici non si potevano servire bevande alcoliche con pi\u00f9 dell\u20198% di alcol.\u201d<\/div>\n<\/p><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Ad esempio, <strong>con la pi&ugrave; classica delle pizze come la margherita si pu&ograve; pensare a bollicine<\/strong> pi&ugrave; semplici come quelle di un Prosecco oppure con una maggiore struttura come un Franciacorta o un Trento doc; lo Champagne? C&rsquo;&egrave; chi ci ha pensato e &ndash; dimenticando per un attimo il carattere popolare della pizza e i costi del blasonato vino francese &ndash; il risultato si &egrave; rivelato notevole. <strong>La freschezza di un rosato &egrave; un&rsquo;altra ottima e sperimentata soluzione<\/strong>. Si volessero seguire regole pi&ugrave; scolastiche, per una pizza con pomodoro in farcitura servir&agrave; un vino piuttosto morbido e non troppo pesante per compensarne l&rsquo;acidit&agrave;. Una pizza tutta basata sui vegetali richieder&agrave; in generale leggerezza e morbidezza piuttosto che acidit&agrave;. In presenza di grassi, come nel caso di un topping ricco di formaggi, una buona alternativa che comunque come abbiamo visto &egrave; <strong>una sorta di passepartout sono le bollicine<\/strong>; oppure un bianco di buona acidit&agrave; e freschezza. Se si comincia a salire con l&rsquo;intensit&agrave; del sapore, si tratti di elementi molto sapidi, come ad esempio acciughe e capperi oppure con un salume, si pu&ograve; pensare a una struttura ancora pi&ugrave; accentuata e ad aromi pi&ugrave; ampi. Tutto questo finch&eacute; si parla delle pizze pi&ugrave; classiche.&nbsp;<\/p>\n<p>Ma che succede quando ci si muove nell&rsquo;ambito della contemporaneit&agrave;, ovvero nel caso di farciture complesse alla stregua di un piatto &ldquo;stellato&rdquo;? A questo proposito gli esempi da fare sarebbero moltissimi ed &egrave; qui che entra in gioco <strong>una figura finora vista molto poco in pizzeria che &egrave; quella del sommelier<\/strong>, una figura qualificata in grado di valutare e studiare insieme al cuoco-pizzaiolo le migliori soluzioni, anche quelle meno scontate e sfidanti.
