Moi qui dirige un magazine o\u00f9 le terme salle figure m\u00eame dans le titre de la t\u00eate de page. Mais c&rsquo;\u00e9tait un rappel justifi\u00e9 et j&rsquo;ai admis, avec un grand respect pour cette d\u00e9claration qui voulait valoriser une profession trop souvent d\u00e9nigr\u00e9e, la justesse de Altan Gini, le serveur qui l&rsquo;avait prononc\u00e9e. J&rsquo;avais r\u00e9serv\u00e9 pour un d\u00eener solitaire \u00e0 La Carbonara, \u00e0 Campo de\u2019 Fiori, \u00e0 la derni\u00e8re minute ;&nbsp;<\/p>\n<p>je passerais apr\u00e8s une demi-heure et le serveur m&rsquo;avait conseill\u00e9 l&rsquo;\u00e9tage sup\u00e9rieur. Arriv\u00e9 sur place, j&rsquo;ai opt\u00e9 pour une table en ext\u00e9rieur, apr\u00e8s qu\u2019Antan Gini m\u2019ait conseill\u00e9 deux ou trois emplacements il s&rsquo;est r\u00e9sign\u00e9 en me donnant la table que j&rsquo;avais choisie. Je me suis assis et la table vacillait sur les pav\u00e9s in\u00e9gaux. Quand je l&rsquo;ai fait remarquer, le serveur m&rsquo;a dit cette phrase, ajoutant que cette table, dans ce trou, il savait qu&rsquo;elle n&rsquo;\u00e9tait pas bonne.&nbsp;<\/p>\n<p>Un v\u00e9ritable trou qui ne pouvait m\u00eame pas \u00eatre couvert avec sept centim\u00e8tres de semelles. Seulement si elle \u00e9tait jointe \u00e0 une autre table elle tenait, mais \u00e0 ce moment-l\u00e0, elle devenait pour quatre personnes et, \u00e0 Rome, une table pour quatre pour un seul convive est impossible \u00e0 utiliser.<br \/>Antan Gini est un monsieur albanais arriv\u00e9 en Italie en 1990, probablement \u00e0 bord de ce navire bond\u00e9 de personnes dont la photo avait fait le tour du monde, et depuis 24 ans il est serveur \u00e0 La Carbonara, un lieu historique &#8211; datant de 1912 &#8211; toujours g\u00e9r\u00e9 par la m\u00eame famille. Il est confront\u00e9 chaque jour au fait que ce n&rsquo;est pas un restaurant avec menu touristique, comme on pourrait le croire vu l&#8217;emplacement. Moi-m\u00eame au d\u00e9but je le pensais.&nbsp;<\/p>\n<p>Et il se trouve \u00e0 pr\u00e9senter une cuisine, principalement romaine, qui se vante de mati\u00e8res premi\u00e8res de qualit\u00e9 absolue comme le cacio e pepe avec les spaghettoni monograno Felicetti ou les anchois de Cetara sous la marque Armatore, pas des produits bon march\u00e9.<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/camerieri-1.jpg\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Manger seul parfois aide, \u00e0 regarder autour de soi, \u00e0 espionner les tables des voisins, \u00e0 recueillir des morceaux de conversation dans diverses langues, \u00e0 voir ce que et comment boivent les touristes \u00e0 Rome, comme probablement dans n&rsquo;importe quel autre lieu italien, cela nous am\u00e8ne \u00e0 reconsid\u00e9rer la connaissance que l&rsquo;on a de nos habitudes alimentaires ; les Italiens mangent pour le plaisir que cela implique, les \u00e9trangers g\u00e9n\u00e9ralement juste pour se nourrir.<\/p>\n<p>\u00ab\u00a0C&rsquo;est la carbonara le plat le plus choisi\u00a0\u00bb, me confie Antan Gini. Celui, d&rsquo;ailleurs, qui se rapproche le plus du go\u00fbt des Am\u00e9ricains ; ce n&rsquo;est pas un hasard si l&rsquo;histoire de ce plat commence avec les rations K que les Am\u00e9ricains avaient pendant la Seconde Guerre mondiale en Italie.<\/p>\n<p>Avec Artan ce soir-l\u00e0, malgr\u00e9 le manque de personnel, il y avait toujours le temps d&rsquo;\u00e9changer quelques mots. Et il m&rsquo;a fait r\u00e9fl\u00e9chir \u00e0 l&rsquo;histoire de cet homme qui s&rsquo;est cr\u00e9\u00e9 une vie et un style tout italien, qui travaille depuis 24 ans toujours au m\u00eame endroit et qui parle bien de la famille propri\u00e9taire, de l&rsquo;huile qu&rsquo;il met sur ma table en disant qu&rsquo;elle provient des oliveraies que cette famille poss\u00e8de hors de Rome et que ces bouteilles se trouvent seulement \u00e0 La Carbonara.
