La 00 correspond &agrave; la farine la plus blanche et la farine compl&egrave;te correspond &agrave; la farine la plus fonc&eacute;e, dans laquelle une grande partie du son reste pr&eacute;sente.<\/p>\n<p>La qualit&eacute; de la farine est d&eacute;termin&eacute;e selon sa capacit&eacute; &agrave; former une p&acirc;te &eacute;lastique et r&eacute;sistante capable de retenir les gaz de fermentation, bien plus que selon son type. (00, 0 ou autres) La r&eacute;action de la farine d&eacute;pendra tr&egrave;s souvent de la quantit&eacute; et de la qualit&eacute; des prot&eacute;ines pr&eacute;sentes dans les c&eacute;r&eacute;ales dont elle provient.<\/p>\n<p>&nbsp;<\/p>\n<p>Pour classifier et distinguer les diff&eacute;rentes qualit&eacute;s de farine, on fait souvent allusion au W comme unique param&egrave;tre de r&eacute;f&eacute;rence : est-ce justifi&eacute; ou non ?<\/p>\n<p>&nbsp;<\/p>\n<p>Le W (indice de force de la farine) correspond &agrave; la valeur obtenue gr&acirc;ce &agrave; une analyse de laboratoire effectu&eacute;e &agrave; l&rsquo;aide de l&rsquo;Alv&eacute;ographe de Chopin. Il est aussi possible de d&eacute;terminer le P\/L, c&rsquo;est-&agrave;-dire le rapport entre la r&eacute;sistance et l&rsquo;extensibilit&eacute; de la farine pr&eacute;sente dans la p&acirc;te.&nbsp;<\/p>\n<p>Est-il correct de se baser uniquement sur les deux valeurs produites par le test alv&eacute;ographique?<\/p>\n<p>La r&eacute;ponse peut se trouver en &eacute;valuant au mieux les conditions dans lesquelles se d&eacute;roule ce test qui, m&ecirc;me s&rsquo;il est rapide, poss&egrave;de tout de m&ecirc;me ses limites.<\/p>\n<p>Nous allons d&eacute;couvrir ensemble pourquoi :<\/p>\n<ul>\n<li>Le test est r&eacute;alis&eacute; &agrave; l&rsquo;aide d&rsquo;une p&acirc;te &agrave; hydratation constante de 50% (+ sel &agrave; 2,5%) et ce, quelle que soit l&rsquo;absorption r&eacute;elle de la farine qui peut atteindre plus de 60% pour les farines les plus riches en prot&eacute;ines.<\/li>\n<li>L&rsquo;analyse requiert beaucoup de manipulations du professionnel et cela peut influencer le r&eacute;sultat final.<\/li>\n<li>L&rsquo;Alv&eacute;ographe permet une tol&eacute;rance instrumentale de +\/- 8% et cela signifie qu&rsquo;une farine poss&eacute;dant un W de 300 gravite dans une fourchette allant de 276 &agrave; 324, soit 48 points au total.<\/li>\n<li>Le test a une dur&eacute;e de seulement 28 minutes en comprenant le temps d&rsquo;emp&acirc;tement. (8 minutes) Par cons&eacute;quent, les param&egrave;tres et la dur&eacute;e du test ne repr&eacute;sentent pas les conditions d&rsquo;utilisation r&eacute;elles de la farine dans une p&acirc;te &agrave; pizza, qui repose plusieurs heures et surtout se transforme sous l&rsquo;effet des sous-produits du levage. (alcool &eacute;thylique et gaz carbonique)<\/li>\n<\/ul>\n<p>Ainsi, l&rsquo;Alv&eacute;ographe de Chopin peut seulement nous fournir une premi&egrave;re &eacute;tape de l&rsquo;&eacute;valuation de la farine : un premier coup d&rsquo;oeil qui n&eacute;cessiterait cependant d&rsquo;analyser plus attentivement d&rsquo;autres types de valeurs descriptives et structurelles.<\/p>\n<p>On peut donc affirmer que le W et le P\/L seuls ne sont pas suffisants pour d&eacute;terminer les capacit&eacute;s d&rsquo;utilisation de la farine.<\/p>\n<p>Dans les laboratoires des moulins les plus modernes, d&rsquo;autres &eacute;quipements tels que le farinographe et l&rsquo;extensographe de Brabender sont utilis&eacute;s afin de r&eacute;aliser des analyses rh&eacute;ologiques plus fiables et proposer des farines de plus en plus contr&ocirc;l&eacute;es.<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/dilemma-doppiavvu-1.jpg\" alt=\"\" \/>\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Ces appareils mesurent l&rsquo;absorption et la stabilit&eacute; farinographique, ainsi que la r&eacute;sistance, l&rsquo;&eacute;lasticit&eacute; et l&rsquo;&eacute;nergie extensographique en utilisant des p&acirc;tes &agrave; hydratation correcte avec des temps de repos plus longs. Les tests sont d&rsquo;autant plus pouss&eacute;s qu&rsquo;ils permettent de mesurer les performances r&eacute;elles des diff&eacute;rents types de farine et la dynamique d&rsquo;une p&acirc;te. L&rsquo;utilisation de ces appareils ne peut pas &ecirc;tre influenc&eacute;e par le professionnel qui l&rsquo;utilise. Par cons&eacute;quent, les valeurs produites sont plus fiables que celles de l&rsquo;Alv&eacute;ographe Chopin. Malheureusement, la lecture des valeurs farinographiques et extensographiques n&eacute;cessite beaucoup d&rsquo;exp&eacute;rience afin de pouvoir interpr&eacute;ter les r&eacute;sultats correctement. Ainsi, les mots tels que &laquo;&nbsp;&eacute;nergie&nbsp;&raquo; ou &laquo;&nbsp;stabilit&eacute;&nbsp;&raquo; sont moins connus et utilis&eacute;s dans le lexique du pizzaiolo.<br \/>\nDans ce cas, existe t-il des valeurs capables de repr&eacute;senter <b>les caract&eacute;ristiques <\/b>d&rsquo;une farine ainsi que son utilisation r&eacute;elle?<br \/>\nSi le W et le P\/L sont les seules valeurs rh&eacute;ologiques prises en consid&eacute;ration, certainement pas! La qualit&eacute; d&rsquo;une farine correspond au r&eacute;sultat d&rsquo;une vision d&rsquo;ensemble qui ne tient pas seulement compte de ce qui a &eacute;t&eacute; dit jusqu&rsquo;&agrave; pr&eacute;sent, mais aussi de la gestion correcte du processus de mouture du grain et de la qualit&eacute; du bl&eacute; qui sera broy&eacute;. Sa valeur r&eacute;elle n&rsquo;est pas exprim&eacute;e en chiffres mais elle est li&eacute;e aux caract&eacute;ristiques du bl&eacute; dont elle provient. Il faut donc faire attention &agrave; plusieurs param&egrave;tres qui peuvent influencer la qualit&eacute; globale, tels que: la s&eacute;lection du bl&eacute;, un processus de mouture pr&eacute;cis qui respecte le grain et les qualit&eacute;s de chaque vari&eacute;t&eacute;, un m&eacute;lange parfait de farines permettant d&rsquo;obtenir les combinaisons les plus adapt&eacute;es aux diff&eacute;rents types de p&acirc;tes.
