Aujourd&rsquo;hui, nous d\u00e9couvrons la pizza sucr\u00e9e de Gianni Di Lella et Roberto Rossi. <\/p>\n<p>&nbsp;<\/p>\n<p>Lorsque vous pensez \u00e0 Maranello, la premi\u00e8re chose qui vous vient \u00e0 l&rsquo;esprit est ce \u00ab cheval cabr\u00e9 \u00bb qui a marqu\u00e9 et continue de marquer l&rsquo;histoire de l&rsquo;automobile mondiale. Mais outre Ferrari et les personnes qui y travaillent (et qui, en temps normal, viennent ici pour manger une pizza) <strong>, \u00e0 Maranello, il y a Gianni Di Lella et La Bufala<\/strong>, une pizzeria qu&rsquo;il vaut la peine de conna\u00eetre. Di Lella est l&rsquo;un des <strong>pr\u00e9curseurs<\/strong> les plus efficaces <strong>de la pizza sucr\u00e9e<\/strong>, ce qui ne signifie \u00e9videmment pas qu&rsquo;il faille prendre une base ordinaire et y \u00e9taler quelque chose comme une savoureuse cr\u00e8me aux noisettes. Nous l&rsquo;avons donc vu collaborer avec un chef comme Roberto Rossi, de la Locanda Del Feudo \u00e0 Castelvetro, une autre ville de Mod\u00e8ne. \u00ab Mon id\u00e9e \u00e9tait d&rsquo;essayer de <strong>transmettre mon \u00e9motion \u00e0 un chef pour qu&rsquo;il m&rsquo;aide \u00e0 d\u00e9velopper une id\u00e9e<\/strong>. Chacun doit faire sa part du travail et j&rsquo;avais en t\u00eate une pizza sucr\u00e9e, fra\u00eeche et accueillante, quelque chose de fantaisiste. C&rsquo;est ainsi qu&rsquo;est n\u00e9e cette pizza \u00bb, explique M. Di Lella.      &nbsp;<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/di_lella_2.jpg\" alt=\"\">\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Rossi a travaill\u00e9 dessus et a mis au point une garniture \u00e0 base de confiture de mangue et de fraises hach\u00e9es, avec un <strong>temps de cuisson assez court<\/strong> pour que la mangue reste ferme et que les fraises apportent du moelleux \u00e0 la mastication et donnent un point l\u00e9g\u00e8rement plus \u00ab\u00a0humide\u00a0\u00bb en bouche. Un zeste de citron l\u00e9g\u00e8rement sucr\u00e9 et la pizza se termine par la poudre de trois chocolats, blanc, au lait et 100 % cacao, qui fondent sous l&rsquo;effet de la chaleur. Lorsque nous l&rsquo;interrogeons, Gianni di Lella nous explique qu&rsquo;il n&rsquo;y a pas de diff\u00e9rence substantielle de p\u00e2te entre une pizza sucr\u00e9e et une pizza sal\u00e9e : \u00ab\u00a0On m&rsquo;a toujours enseign\u00e9 qu&rsquo;<strong>une<\/strong> pizza <strong>sucr\u00e9e ne devait jamais \u00eatre trop sucr\u00e9e, pour ne pas \u00eatre trop gourmande, j&rsquo;ai donc laiss\u00e9 ma base neutre et j&rsquo;ai travaill\u00e9 sur la lev\u00e9e et la maturation<\/strong>, puis sur le croustillant et le moelleux. J&rsquo;ai donc utilis\u00e9 <strong>un m\u00e9lange de farine double z\u00e9ro<\/strong> de force 300 comme base de liaison, puis de la<strong> farine 100% compl\u00e8te<\/strong> \u00e9cras\u00e9e \u00e0 froid pour ne pas surchauffer le bl\u00e9 dans le processus de mouture et pour exprimer les meilleurs parfums et ar\u00f4mes, \u00e0 nouveau une farine de riz brun et un petit pourcentage de farine de semoule remoulue et de farine de ma\u00efs. Je tiens toujours \u00e0 ce que <strong>la pizza conserve une bonne coloration<\/strong> et que la cro\u00fbte reste moelleuse.    &nbsp;<\/p>\n<p>Pour la p\u00e2te, en revanche, j&rsquo;ai utilis\u00e9 un autre m\u00e9lange que j&rsquo;ai imagin\u00e9 avec de la farine de riz, de la semoule tr\u00e8s finement moulue et de la farine de ma\u00efs, \u00e9galement moulue, pour donner \u00e0 l&rsquo;ext\u00e9rieur un petit c\u00f4t\u00e9 croustillant qui craque dans la bouche\u00a0\u00bb. La pizza, avant d&rsquo;\u00eatre garnie, est saupoudr\u00e9e de sucre roux caram\u00e9lis\u00e9 \u00e0 la sortie du four o\u00f9 il aura bien s\u00e9ch\u00e9 sans se dess\u00e9cher, en cuisant \u00e0 360\u00b0 pendant environ 90 secondes. &nbsp;<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Di Lella indique que plusieurs coll\u00e8gues ont \u00e9galement suivi cette voie, mais contrairement \u00e0 d&rsquo;autres, il ne sort pas trop des sentiers battus avec des id\u00e9es trop cr\u00e9atives : \u00ab\u00a0J&rsquo;aime \u00e9tudier les desserts traditionnels, comme la trifle anglaise ou la tarte tatin, et trouver la bonne solution pour les combiner avec la pizza. C&rsquo;est ainsi qu&rsquo;<strong>un Napolitain \u00e0 l&rsquo;accent \u00e9milien comme moi voit la pizza<\/strong>. Je veux qu&rsquo;elle arrive \u00e0 la fin du repas sans \u00eatre lourde. En outre, elle doit \u00eatre mang\u00e9e avec app\u00e9tit, car la pizza sucr\u00e9e est une pizza qui se d\u00e9guste en compagnie. Habituellement, \u00e0 table, nous la r\u00e9partissons entre quatre convives, \u00e0 raison d&rsquo;une part chacun. Mais il y a aussi ceux qui sont venus ici, qui ont d&rsquo;abord mang\u00e9 une assiette de pizza frite et qui ont ensuite command\u00e9 (et termin\u00e9) une pizza enti\u00e8re\u00a0\u00bb.     &nbsp;<\/p>\n<p>Di Lella a appris \u00e0 \u00e9taler la pizza le soir : \u00ab\u00a0mon p\u00e8re me laissait les bo\u00eetes et je continuais jusqu&rsquo;\u00e0 ce que la pizza soit bien sortie. C&rsquo;est toujours lui qui fait la p\u00e2te, car il est fondamental que la personne qui la fait soit toujours la m\u00eame pour que la qualit\u00e9 soit la m\u00eame\u00a0\u00bb. Di Lella poursuit : \u00ab\u00a0En fait, <strong>il n&rsquo;y a pas de pizza compliqu\u00e9e<\/strong>, il peut y avoir une pizza qui n&rsquo;est pas comprise, mais tout commence avec nous. Et c&rsquo;est l\u00e0 que l&rsquo;importance de la personne pr\u00e9sente dans la pi\u00e8ce se fait sentir, car si la personne qui doit la proposer sait comment le faire, elle est \u00e9galement en mesure d&rsquo;en faire autant.    <strong>transmettre son \u00e9motion au client<\/strong>. Dans cette p\u00e9riode, j&rsquo;ai presque peur qu&rsquo;il faille revenir en arri\u00e8re, les gens ont atteint une limite, il faut un \u00e9quilibre et il vaut mieux travailler d&rsquo;abord sur l&rsquo;attention et le d\u00e9tail. Je suis pizza\u00efolo et maintenant je me retrouve \u00e0 faire des livraisons, je me suis adapt\u00e9 : dans une p\u00e9riode difficile comme celle-ci, il faut de la simplicit\u00e9, du contact humain pour garder les relations vivantes et en m\u00eame temps proposer un bon produit, sinc\u00e8re et facile \u00e0 comprendre \u00ab . Roberto Rossi en est \u00e9galement convaincu et pense de la m\u00eame mani\u00e8re pour son restaurant : \u00bb Dans notre cuisine  <strong>nous avons la chance d&rsquo;\u00eatre inspir\u00e9s par la tradition, mais n&rsquo;oublions pas notre propre go\u00fbt<\/strong>.
