Mais pour \u00ab Pizza \u00bb, les vingt derni\u00e8res ann\u00e9es ont \u00e9t\u00e9 une v\u00e9ritable r\u00e9volution. <\/p>\n<p>D&rsquo;une cuisine de rue humble et populaire, il est devenu un <strong>ph\u00e9nom\u00e8ne gastronomique<\/strong>, culturel, social et m\u00e9diatique. Mais venons-en \u00e0 la question du titre. Que pouvons-nous apprendre des pizza\u00efolos du si\u00e8cle dernier ? Nous pensons \u00e0 beaucoup de choses, li\u00e9es non pas tant aux aspects techniques qu&rsquo;aux aspects humains.   <\/p>\n<p>Essayons d&rsquo;y voir plus clair. Au cours des derni\u00e8res ann\u00e9es, les <strong>qualit\u00e9s des farines, les m\u00e9langes de p\u00e2te de base et la disponibilit\u00e9 des ingr\u00e9dients de garniture<\/strong> ont \u00e9t\u00e9 explor\u00e9s. Le four a \u00e9galement \u00e9volu\u00e9, en particulier dans les modes de cuisson alternatifs au gaz et \u00e0 l&rsquo;\u00e9lectricit\u00e9, mais m\u00eame si nous consid\u00e9rons toujours le four \u00e0 bois, nous connaissons mieux son comportement, la variation des temp\u00e9ratures \u00e0 l&rsquo;int\u00e9rieur et leur effet sur les caract\u00e9ristiques du produit final.  <\/p>\n<p>Mais la <strong>pizza n&rsquo;est pas seulement une question de technique<\/strong> ou d&rsquo;assemblage de diff\u00e9rents ingr\u00e9dients. La pizza est quelque chose de plus, comme tous les <strong>produits qui sont fabriqu\u00e9s enti\u00e8rement \u00e0 la main par l&rsquo;homme, du d\u00e9but \u00e0 la fin<\/strong>. C&rsquo;est la valeur ajout\u00e9e qui fait la diff\u00e9rence.  <\/p>\n<p>Nous en arrivons ici au c\u0153ur de la question : <strong>que pouvons-nous apprendre des pizza\u00efolos du si\u00e8cle dernier ?<\/strong> Apr\u00e8s cette pr\u00e9misse, essayons de r\u00e9pondre. Nous pensons que c&rsquo;est le d\u00e9vouement et le respect de leur travail. <\/p>\n<\/div><\/div>\n<div class=\"stripe-quote \">\n<div class=\"stripe-background\">\n    <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/background-quote.jpg?1600183999\" alt=\"\">\n<\/div>\n<div class=\"text-description\">\n  LE D\u00c9VOUEMENT ET LE RESPECT POUR LEUR TRAVAIL<\/div>\n<\/p><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>Au si\u00e8cle dernier, un pizza\u00efolo n&rsquo;avait pas, comme aujourd&rsquo;hui, d&rsquo;exemples devant lui qui pouvaient \u00eatre une force motrice. C \u00ab \u00e9tait <strong>un travail qui n&rsquo;apportait pas d&rsquo;avantages secondaires<\/strong>, on ne devenait pas c\u00e9l\u00e8bre, on ne devenait pas riche, on ne devenait pas m\u00e9diatique, on ne pouvait pas s&rsquo;attendre \u00e0 recevoir des certificats et de la gloire, \u00e0 voyager et \u00e0 \u00eatre estim\u00e9 et v\u00e9n\u00e9r\u00e9 comme une star. <strong>C \u00bb \u00e9tait un travail difficile et fatigant<\/strong>. Mais ils l&rsquo;ont poursuivi, affinant chacun d&rsquo;entre eux par de petits gestes, des inventions, jusqu \u00ab \u00e0 ce qu&rsquo;ils l&rsquo;am\u00e8nent au mill\u00e9naire qui l&rsquo;a fait exploser. Mais les \u201cmillennials\u201d, la g\u00e9n\u00e9ration actuelle, ont trouv\u00e9 un terrain fertile, une figure professionnelle (celle du pizzaiolo) d\u00e9j\u00e0 d\u00e9finie et qui ne demandait qu \u00bb \u00e0 d\u00e9coller.  <\/p>\n<p>Et une note de m\u00e9rite va surtout aux \u00ab Centenaires \u00bb, au groupe des <strong>Ma\u00eetres Pizza\u00efolos de Naples (dont la pizzeria est plus que centenaire)<\/strong> qui ont assur\u00e9 la continuit\u00e9 du m\u00e9tier en construisant son histoire et en cr\u00e9ant les bases d&rsquo;une reconnaissance mondiale de l&rsquo;art de la pizza, en passant le relais d&rsquo;une g\u00e9n\u00e9ration \u00e0 l&rsquo;autre. \u00c0 notre avis, le moment le plus difficile a \u00e9t\u00e9 le d\u00e9but des ann\u00e9es 2000. Lorsque le printemps et la mode de la cuisine ont commenc\u00e9, tout le monde voulait \u00eatre chef, mais le pizzaiolo \u00e9tait consid\u00e9r\u00e9 comme un \u00eatre presque inf\u00e9rieur. \u00c0 l \u00ab \u00e9poque, dans les pizzerias situ\u00e9es en dehors de Naples (qui \u00e9taient d\u00e9j\u00e0 nombreuses), il \u00e9tait difficile de trouver de jeunes pizza\u00efolos. Il s&rsquo;agissait d&rsquo;une profession de plus en plus entre les mains d&rsquo;une g\u00e9n\u00e9ration m\u00fbre qui, dans de nombreux cas, devenait \u00e2g\u00e9e, avec le risque qu&rsquo;elle s \u00bb \u00e9teigne avec son in\u00e9vitable disparition.
