Francesco De Paolis a appris le m\u00e9tier d\u00e8s son plus jeune \u00e2ge, a acquis de l&rsquo;exp\u00e9rience dans diff\u00e9rents \u00e9tablissements et a d\u00e9cid\u00e9 de mettre \u00e0 profit ses comp\u00e9tences en cr\u00e9ant sa propre entreprise. Cette histoire peut sembler banale, mais elle r\u00e9v\u00e8le le caract\u00e8re et l&rsquo;ing\u00e9niosit\u00e9 de son protagoniste qui, en quelques ann\u00e9es, a construit son succ\u00e8s, \u00e9tape par \u00e9tape, jusqu&rsquo;\u00e0 la r\u00e9alit\u00e9 actuelle, un restaurant-pizzeria avec braceria dans une ferme r\u00e9nov\u00e9e avec plusieurs salles et une pergola bien \u00e9quip\u00e9e pouvant accueillir plus de 500 personnes \u00e0 l&rsquo;int\u00e9rieur et \u00e0 l&rsquo;ext\u00e9rieur, un personnel de 11 personnes, des jeunes entreprenants comme lui, et une vision claire : cr\u00e9er un format et \u00e9largir le cercle d&rsquo;action ; une nouvelle ouverture est d\u00e9j\u00e0 pr\u00e9vue, \u00e0 proximit\u00e9 de la mer.  <\/p><p>J&rsquo;ai d\u00e9marr\u00e9 l&rsquo;entreprise en partant de la base\u00a0\u00bb, explique M. De Paolis, \u00ab\u00a0avec une petite pizzeria \u00e0 emporter et des pizzas classiques, dans une ambiance familiale\u00a0\u00bb. L&rsquo;id\u00e9e d&rsquo;agrandir les locaux est venue deux ans plus tard, avec l&rsquo;opportunit\u00e9 d&rsquo;acheter la ferme adjacente et l&rsquo;ouverture cons\u00e9cutive d&rsquo;une premi\u00e8re salle, et ainsi de suite jusqu&rsquo;\u00e0 la situation actuelle. Il y a trois ans, avec l&rsquo;ouverture de la derni\u00e8re grande salle, j&rsquo;ai d\u00e9cid\u00e9 d&rsquo;introduire la braceria et d&rsquo;axer le restaurant sur la pizza et la carne alla grigia, deux types de cuisine de plus en plus populaires, et nous nous sommes sp\u00e9cialis\u00e9s dans ces deux domaines. Nous proposons un restaurant-pizzeria de qualit\u00e9, avec une attention particuli\u00e8re aux mati\u00e8res premi\u00e8res et \u00e0 l&rsquo;ex\u00e9cution, et avec un espace aussi grand et spacieux, nous sommes en mesure d&rsquo;organiser des \u00e9v\u00e9nements de toutes sortes, des f\u00eates d&rsquo;anniversaire aux communions, en passant par les mariages. Le lieu et son style se pr\u00eatent parfaitement \u00e0 des rencontres conviviales et nous nous en sortons tr\u00e8s bien\u00a0\u00bb.<\/p><p>L&rsquo;ambiance, accueillante et spacieuse, est \u00e9l\u00e9gante et lumineuse ; Francesco l&rsquo;a voulue bien agenc\u00e9e, informelle mais avec le souci du d\u00e9tail, avec classe, car le client doit se sentir \u00e0 l&rsquo;aise et choy\u00e9, il doit avoir envie de revenir. Une cuisine \u00e0 la hauteur des attentes ne suffit pas, il faut aussi une hospitalit\u00e9 au sens le plus large du terme. La cuisine est certainement un point fort, la pizza est le c\u0153ur du restaurant avec sa p\u00e2te classique dans le style de Lecce pour une pizza basse, l\u00e9g\u00e8re et moelleuse. \u00ab\u00a0Nous pratiquons une lev\u00e9e longue, de 48 \u00e0 72 heures, explique Francesco, et nous <strong>utilisons un m\u00e9lange de farines 5 Stagioni<\/strong>, qui ont toujours \u00e9t\u00e9 synonymes de fiabilit\u00e9 pour nous, car elles garantissent un rendement constant et d&rsquo;excellentes performances.   <\/p><p>Nous \u00e9laborons un m\u00e9lange de farines rouge, bleue et semoule avec lequel nous obtenons le r\u00e9sultat qui correspond le mieux \u00e0 notre style : une pizza digeste, l\u00e9g\u00e8re et savoureuse. Nous fabriquons \u00e9galement une p\u00e2te au s\u00e9same et au bl\u00e9 dur, lev\u00e9e 72 heures, une sp\u00e9cialit\u00e9 qui offre une plus grande digestibilit\u00e9 et un meilleur parfum, et qui est tr\u00e8s appr\u00e9ci\u00e9e. Il consacre d&rsquo;ailleurs beaucoup de temps \u00e0 la formation, non seulement dans le domaine culinaire, mais aussi pour se tenir au courant de la gestion des ressources humaines, des t\u00e2ches qui font la diff\u00e9rence entre un pizza\u00efolo et un entrepreneur : \u00ab\u00a0Nous sommes n\u00e9s pizza\u00efolos\u00a0\u00bb, dit-il, \u00ab\u00a0mais ensuite nous ouvrons la pizzeria et nous nous rendons compte que ce n&rsquo;est pas suffisant : il faut devenir entrepreneur pour rester sur le march\u00e9 et, pour cela, il ne reste plus qu&rsquo;\u00e0 \u00e9tudier, ouvrir notre esprit, apprendre toujours plus et \u00e9largir nos connaissances pour soutenir de mani\u00e8re ad\u00e9quate ce que la cr\u00e9ativit\u00e9 et la passion nous inspirent\u00a0\u00bb.
