N\u00e3o \u00e9 um desafio f\u00e1cil, portanto, aquele que <strong>Romina Cortese e Rosario Giannattasio<\/strong> enfrentaram a quatro m\u00e3os na &#8220;casa&#8221; desta \u00faltima, a Acqua e Farina, em Vicenza, para <strong>fazer uma verdadeira pizza territorial<\/strong>. No entanto, a cozinheira de Vicenza e o talentoso pizzaiolo de Salerno souberam interpretar a sua ideia de forma brilhante e nada previs\u00edvel. Romina conta: &#8220;Rosario e eu pens\u00e1mos em desenvolver este recheio respeitando o mais poss\u00edvel o territ\u00f3rio.   <\/p>\n<p>\u00c9 por isso que escolhemos <strong>ervilhas de Borso del Grappa<\/strong> (\u00e9 a esta\u00e7\u00e3o certa) com tr\u00eas consist\u00eancias. Desde a passata (pur\u00e9) que vai para a base e depois para a cozedura, obtida atrav\u00e9s da simples mistura das ervilhas sem casca depois de escaldadas durante alguns minutos e adicionadas de \u00e1gua, sal e \u00f3leo e tratadas de forma a terem a densidade certa para n\u00e3o desfazerem a mistura, at\u00e9 \u00e0s ervilhas frescas e, finalmente, \u00e0s vagens cortadas em juliana, escaldadas e caramelizadas em \u00e1gua e a\u00e7\u00facar no final da cozedura. Depois, h\u00e1 <strong>a truta salmonada de Brenta<\/strong>, um produto que, definitivamente, n\u00e3o \u00e9 muito utilizado: tamb\u00e9m ela \u00e9 preparada de uma forma simples, porque primeiro \u00e9 marinada durante cinco horas numa base de sal e a\u00e7\u00facar, \u00e0 qual apenas adiciono uma raspa de lim\u00e3o, e depois \u00e9 cortada em carpaccio&#8221;.  <\/p>\n<p>Depois, os seus ovos e, por fim, <strong>o queijo stracchino de vaca da Castellan, uma empresa feminina de Ros\u00e0, presente na zona h\u00e1 cinquenta anos e que trabalha de forma artesanal.<\/strong> O toque final \u00e9 o alecrim, sob a forma de \u00f3leo essencial e das suas flores frescas. Tudo isto sobre o disco guloso obtido da massa de alt\u00edssima hidrata\u00e7\u00e3o que est\u00e1 a fazer o sucesso da Rosario: \u201cestamos a 85% de \u00e1gua sobre a farinha: <strong>tenho o h\u00e1bito de utilizar apenas farinhas de tipo 1<\/strong>, porque d\u00e3o sabores e aromas pronunciados mas sobretudo requerem menos sal, sendo mais saborosas do que as de tipo 0. Base biga de 24 horas uma massa final que ainda faz at\u00e9 36 horas. Vamos refrescar com uma farinha mais fraca, para conseguirmos maior soltura e leveza\u201d.    &nbsp;<\/p>\n<\/div><\/div>\n<div class=\"stripe-one-col-media \">\n            <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/chef_cortese.jpg\" alt=\"\">\t\t<\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>De facto, Giannattasio gaba-se de que n\u00e3o \u00e9 inconceb\u00edvel pensar em comer duas das suas <strong>pizzas, t\u00e3o leves, fofas, com uma alveola\u00e7\u00e3o arejada e uma crosta bem desenvolvida<\/strong>. Diz ele: \u201ctens de ficar com vontade de comer mais\u201d. A ideia de uma massa cujo peso n\u00e3o excede 250 gramas \u00e9 obter uma piza que \u201caguente\u201d mesmo os recheios importantes sem a tornar redundante e excessiva. <strong>A cozedura \u00e9 feita com lenha de faia, o que permite obter um fumo ligeiro<\/strong> e n\u00e3o coberto, a temperaturas ligeiramente inferiores e tempos superiores \u00e0 m\u00e9dia de uma napolitana cl\u00e1ssica: \u201cUtilizando um tipo 1 que j\u00e1 ret\u00e9m muita humidade, \u00e9 importante para mim que a cozedura n\u00e3o seja demasiado violenta. Fica l\u00e1 dentro durante dois minutos: a cozedura faz 60% do trabalho\u201d.  <\/p>\n<\/div><\/div>\n<div class=\"stripe-quote \">\n<div class=\"stripe-background\">\n    <img decoding=\"async\" src=\"https:\/\/pizzastories.le5stagioni.com\/wp-content\/uploads\/2025\/05\/background-quote.jpg?1600183999\" alt=\"\">\n<\/div>\n<div class=\"text-description\">\n  Devemos aprender a respeitar a terra e as mat\u00e9rias-primas e estar conscientes de que dar vida aos produtos e torn\u00e1-los conhecidos atrav\u00e9s da nossa a\u00e7\u00e3o \u00e9 fundamental<\/div>\n<\/p><\/div>\n<div class=\"stripe-one-col-text \">\n<div class=\"text-description\">\n<p>O resultado? \u00c9 sem d\u00favida excelente, com <strong>uma harmonia perfeita entre a massa e o recheio<\/strong>: uma pizza saborosa, com um sabor tendencialmente doce, mas muito bem equilibrado pelo sabor das ovas de truta. Tanto Romina como Rosario concordam num ponto que \u00e9 tamb\u00e9m uma prerrogativa da associa\u00e7\u00e3o a que pertencem, que \u00e9 a CHIC- Charming Italian Chefs:<strong>\u201cTemos de aprender a respeitar o territ\u00f3rio e as mat\u00e9rias-primas<\/strong> e estar conscientes de que dar vida aos produtos e torn\u00e1-los conhecidos atrav\u00e9s das nossas ac\u00e7\u00f5es \u00e9 fundamental\u201d. J\u00e1 n\u00e3o se trata apenas de montagem de produtos. Agora, por exemplo, trabalho com fermenta\u00e7\u00f5es, fa\u00e7o experi\u00eancias com espessantes naturais como a cera de abelha e o p\u00f3len.
