
In the heart of Gargano, one of the most enchanting areas of Puglia, PaposciaRe was born, a project that celebrates an ancient gastronomic tradition with a modern twist.
Founded in 2017 by Gianluca Ferraraccio, known as the “King of Paposcia”, and supported by his son Vincenzo, PaposciaRe and its spin-off PaposciaRe 2.0 carry on the legacy of one of the most representative products of the area: the Paposcia.

The Paposcia, a culinary symbol of Gargano, is a product protected by the DECO (Denomination of Communal Origin) mark. This certification, created in the 1990s, protects the authenticity of local products, traditional recipes, and artisanal activities. The history of the Paposcia dates back to the 16th century, when the bakers of Vico del Gargano used leftover dough to test the temperature of their wood-fired ovens. Today, this long, fragrant focaccia is filled with a wide selection of typical Gargano ingredients, such as local cheeses, artisanal cured meats, and fresh vegetables from Puglia.

Thanks to his long experience in the restaurant business, Gianluca Ferraraccio has reinvented the Paposcia, preserving its traditional values. His journey as a pizzaiolo and innovator has made him a key figure in the Puglian gastronomic scene, bringing this ancient product to the forefront as a contemporary culinary experience. The title “King of Paposcia” has become synonymous with his ability to innovate while staying true to historical roots.
